Super easy and delicious, these no yeast 2 ingredient dough Cinnamon Rolls are made with whole wheat flour for a healthy alternative to the store bought option. With no rising time needed, you can have your cinnamon bun fix in under an hour!
Jump to RecipeI love love love cinnamon rolls and can probably finish an entire batch in one meal. Yes, that much!
But I really can’t stand all that sugar on the labels from any of that stuff you get at the bakery. And there’s also the white/ all purpose flour which I’m not too big a fan of either.
So of course I had to come up with a healthified version of my own using whole wheat flour.
But you see I’m also super lazy, so all that waiting for a rise with using yeast and such was going to be too long for your girl here.
Solution? Quick cinnamon rolls that don’t need any yeast or waiting. Just mix, roll and bake! Literally the dream here.
Say no to the Yeast!
These cinnamon rolls are based off the weight watchers 2 ingredient dough made with self-rising flour and greek rogurt.
Since the flour has the rising capability, there’s no yeast needed and no waiting for the rising time.
I made a version of the self rising flour using whole wheat flour instead, but a regular version would work just as well.
What you need for these healthy cinnamon rolls:
- Whole Wheat Flour
&
Baking Powder
Use them to make a healthier version, but if you like you can use the standard self raising flour.
- Salt
- Greek Yogurt: You want to use a Greek Yogurt or a Coconut Yogurt. I used Non-fat Greek, but other fat content would work well too. DO NOT USE NATURAL YOGURT or the dough will be too sticky and you’re going to end up with a weird consistency for the dough once you’ve added more flour. Rolls won’t rise.
- Vanilla Extract & Stevia: I added these to the dough so it doesn’t have that dry plain taste, but is sweet enough in itself that you don’t even need a frosting!
- 1:1 Brown Sugar Replacement: I used Swerve brown so that the cinnamon rolls are sugar free, but you can use coconut sugar to keep them a bit healthy. As a last resort, regular brown sugar.
- Cinnamon: The good stuff! I used the Ceylon Cinnamon here from Kiva – organic and just so delicate!
- Very little Butter: Just half a tablespoon, compared to the usual ¼ cup or more that normal recipes ask for, so these are still way healthy!
If you want a quick frosting glaze, then some more yogurt, vanilla and stevia sweetener. Kiva here on that too.
How to make & Some Tips for easy cinnamon buns
- Mix the flour and baking powder together, and separately the yogurt, sweetener and vanilla.
- Then add in the yogurt to the flour and mix with a big spoon until it forms small chunks of dough.
- Transfer to a work surface and use your hands to make a ball of dough.
Tip: Don’t over-mix or the rolls will just be too tough.
- Place the dough on a lightly floured surface and roll it out to a large rectangle about ½” thick.
Roll it such that the longer end is facing you.
Tip: Make sure the surface and rolling pin are floured or the dough will stick on.
Tip: Don’t roll too thin or you won’t get the nice puff – this was why my first attempt failed.
- Lightly brush on (or use the back of a spoon) the melted butter on the dough.
- Mix the cinnamon and sugar and sprinkle it over the dough too. Leave about ¼” from the long ends.
- Roll up the dough from one long end (your side) to the next.
Tip: Roll tightly but gently!
- Cut the log using a sharp knife into rolls about 1” wide.
Tip: Don’t cut them too wide or again the rolls won’t puff.
Tip: Use a measuring tape to mark off the rolland then cut.
- Place them in a parchment lined baking pan or sheet, leaving some gap in between so they have space to expand.
- Bake for 30 ish minutes till the edges are golden.
- Cool for about 10 minutes before spreading glaze (just whisk the ingredients), or the frosting will just melt away.
Keep these tips in mind and you’re sure to get the best homemade cinnamon buns you’re going to have!
Can you store these whole wheat cinnamon rolls?
Yes! They’ll keep fresh at room temperature until the next day. Keep them in a resealable container though.
You can also refrigerate them for about a week – airtight container again, or in a sealed zipper bag.
When you’re ready to dig in, microwave it for about 30 seconds, or reheat it in the oven for 6 ish minutes at 350.
You can also freeze the cinnamon rolls for up to 6 months, but about 2-3 in one set (not individually). Use a freezer-safe airtight container or zipper bag.
Thaw it in the microwave for about 4 minutes or outside at room-temperate and then reheat in the microwave for the same 30 seconds or oven for 6 minutes.
Make these 2 ingredient dough cinnamon rolls Vegan & Dairy Free
To make no yeast cinnamon rolls Vegan and diary free , replace the Greek yogurt with a Coconut Yogurt, and use Olive Oil in place of the butter.
These cinnamon rolls already have no milk and no cream cheese, so there’s one less thing to worry about.
The same with the frosting: Use a coconut yogurt or almond or even flax-based instead.
Turn these whole wheat cinnamon rolls Gluten Free!
Use a 1:1 gluten-free self raising flour instead of the Whole wheat and baking powder combination.
I haven’t tried plain gluten free flour + baking powder so I don’t know how/if that would turn out.

2 Ingredient Dough Whole Wheat Cinnamon Rolls (No Yeast)
Ingredients
- 1 cup Whole Wheat Flour, 120g
- 1½ tsp Baking Powder
- ¼ tsp Salt
- 1 cup Plain Greek Yogurt, or Coconut Yogurt, 200g
- 1 tsp Vanilla Extract
- Stevia Sweetener, 5 tsp sugar worth (Use your brand’s Conversion Chart)
Filling:
- 1½ tsp Butter or Olive Oil, Divided
- ¼ cup 1:1 Brown Sugar Substitute, or regular Brown/Coconut Sugar
- 1 Tbsp Cinnamon
Glaze:
- 1 Tbsp Greek Yogurt, about 12g
- ⅛ tsp Vanilla Extract
- Stevia Sweetener, ½ tsp sugar worth (Use your brand’s Conversion Chart)
- ½ tsp Almond Milk, Optional
Instructions
- Preheat oven to 350°F, and line a baking sheet with parchment paper.
- In a large bowl, mix flour and baking powder until combined well.
- In another bowl, mix yogurt, vanilla and sweetener.
- Add yogurt and mix using a spoon until it forms small chunks of dough.
- Transfer to a work surface and use hands to make a ball of dough. Add a tsp of yogurt at a time if the dough is too dry, and more flour if too sticky. DO NOT OVER-MIX.
- Place the dough on a lightly floured surface and roll into a large rectangle (flour the rolling pin) about ¼” thick and 9½”x 6½” size with the longer side facing you.
- Melt butter and brush most of it over the dough. Combine sugar and cinnamon in a small bowl and sprinkle over butter.
- Gently roll up the dough from the long end (towards you) until it meets the other end. Roll tight!
- Cut log into 9 pieces – about 1 inch thick – using a sharp knife and place each piece (cut side up) in prepared pan. Brush the tops with remaining butter.
- Bake for 30-35 minutes until edges puff up and lightly browned.
- Let cool completely 10 minutes.
- To glaze, stir together yogurt, vanilla, sweetener, and milk if using, drizzle over cinnamon rolls, and enjoy!

- Room temperature: 1 day in an airtight container.
- Fridge: 1 week in an airtight container or zipper bag.
