This 90-second Keto Mug Bread is one you want to keep on call when you need bread, and need it now. Its made in the microwave so you don’t have to waste time waiting for an oven to preheat. Once you’ve decided you want it, you can have it in under 5 minutes. That’s honestly the best part about all these microwave-mug-recipes.
It may not look like the bread you’re used to, but its just as light and airy and makes for a great sandwich holder. My personal favorite is to use it to make BBQ chicken sliders, but the possibilities with this go far beyond: Buttered toast, chopped and dried into croutons, bread pudding, avocado toast… Pretty much anything you’d use regular bread for.
Since the recipe calls for a mix of almond and coconut flour, its Gluten-free, Low Carb, Paleo, Keto-friendly and Whole30 compliant. So many dietary restrictions satisfied by one mug, just like coffee. Oooh… maybe I should dip some of this in my latte tomorrow!
90-second Keto Mug Bread
Ingredients
- 1 Tbsp Coconut flour, 8g
- 1 Tbsp Almond Flour, 9g
- ¼ tsp Baking Powder
- ¼ tsp Salt
- 1 Egg
- 1 Tbsp Almond Milk
- 1 Tbsp Olive Oil
Optional Add-ins:
- ½ tsp Dried Herbs
- ½ tsp Onion Powder
- ½ tsp Garlic Powder
Instructions
- In a bowl, whisk the eggs, almond milk and oil.
- In another bowl, combine flours and baking powder.
- Mix dry ingredients into wet and stir.
- Pour batter into a tall mug and tap on the counter a few times to remove air bubbles.
- Microwave on high for 90 seconds.
- Let bread sit for about 2 minutes, then invert mug to remove.
- Cut into ⅓ inch thick slices.
Notes
- Toast on a medium-high skillet in butter or olive oil for about 30 seconds each side until browned and crispy.
- Use in sliders, buttered toast or with top with mashed avocado!
