I don’t know why I didn’t try this one as my first salmon recipe and did that Herb-Mustard Glazed Salmon instead. I think it was just me trying to not give in to what everyone else does?
Well clearly I need to consider the popular opinion a little more.
This fillet turned out perfect and was just bursting with flavor! And to think that all it took was a couple minutes of “labor”.
Easy Baked Cilantro Lemon-Garlic Salmon
Ingredients
- 4½ oz Salmon Fillet, ½ inch thick, 128g
- 1½ tsp Extra Virgin Olive Oil
- 2 tsp Lemon Juice
- 1 Tbsp Cilantro, Fresh & Chopped
- ½ tsp Garlic, Minced, 1 clove
- ¼ tsp Cumin Powder
- ⅛ tsp Cayenne Pepper
- ⅛ tsp each Salt & Pepper
- Non-stick cooking spray
Instructions
- Preheat oven to 425°.
- Line a baking sheet with foil, spray with nonstick spray and place salmon on it, skin-side down. Sprinkle with salt and pepper.
- In a small bowl, combine olive oil, lemon juice, cilantro, garlic, cumin and cayenne pepper.
- Pour mixture over the fillet and bake for about 10-12 minutes, until cooked through.
