Jump to RecipeFor those of you who aren’t familiar with churros, they’re sticks of pastry that are deep fried and then coated in a cinnamon-sugar blend. The deal with churros is that you have them when they’re freshly made coz they’re really light and crunchy on the outside, but still kinda soft-ish on the inside.
Absoultely delish, but also absolutely unhealthy! Deep fried… all purpose flour… a shi*t ton of butter to hold the dough together… Urghhhh
This recipe uses whole wheat flour, barely any butter – just the are minimum required for a waffle recipe – and natural sweeteners.
Light, airy and crispy sticks that are a whole lot better!
Sweet Cinnamon Churro Waffle Sticks with Chocolate Sauce
Ingredients
- 1½ cups Whole Wheat Flour, 180g
- 2 tsp Baking Powder
- Stevia Sweetener, 2 Tbsp sugar worth (Use your brand's Conversion Chart)
- ¼ tsp Salt
- 1½ cup Almond Milk, or other
- 1 Egg, Room Temperature
- ⅓ cup Butter, Melted, or Oil
- 1½ tsp Vanilla Extract
Cinnamon-"Sugar" Coating:
- 1 tsp Cinnamon
- Stevia Sweetener, 4 tsp sugar worth (Use your brand's Conversion Chart)
Chocolate Sauce:
- 4 Tbsp Unsweetened Cocoa
- Stevia Sweetener, 2 Tbsp sugar worth (Use your brand's Conversion Chart)
- 6 Tbsp Almond Milk
Instructions
- Preheat and lightly grease and preheat square waffle iron or waffle stick maker.
- In a small bowl, combine and uniformly mix flour, baking powder, sweetener and salt.
- In a large bowl, whisk together almond milk, egg, melted butter and vanilla extract.
- Add dry ingredients to wet, and stir gently to combine, pressing along the side of the bowl to remove large clumps. Don’t over-mix, there will still be small clumps, but those are expected.
- Pour ⅙ batter into prepared waffle iron.
- Cook for about 3-4 minutes or according to manufacturer instructions.
- Remove from waffle from iron and separate into sticks.
- In a small bowl combine cinnamon powder and sweetener packets and sprinkle over the waffle sticks while they’re still hot.
- Repeat with remaining batter.
- Combine ingredients for the sauce in a small bowl and stir.
- Dip the sticks in that sauce and enjoy while they’re hot and crispy!
