Sunny-Side Roasted Veggies: This is my easy breakfast-for-dinner recipe when I’m too tired to cook something fancy after work. Basic? Yes. Nutritious? Yes. Tasty? Hell yes! Probably that runny yolk at work for the last part, but it definitely works.
Jump to RecipeSpeaking of runny yolks, let me let you in on something. The first time I had a one was in a sunny side up on June 4, 2019, at the age of 23. Yes, I missed out for 23 years.
Why? Because I associated them with being raw eggs and just the thought of consuming that was so urgh. I so wish my sister talked me into it sooner.
The fact that it’s raw hasn’t changed. But I don’t give it much thought anymore, coz it tastes so good!
And pair that oozing yolk with some perfectly roasted and spiced veggies? If they didn’t have all that cholesterol, I’d be eating like 3 servings at once!
