These Zucchini Egg Nests make a great breakfast, or lunch, or even dinner! I for one would take a sunny side up in a crispy, cozy nest any time of day.

Wait I just realized – Sunny-side-up. Sun. Summer – these nests are actually quite representative of the season!
This might just be the next best use of zucchini I could come up with – second to baked goods that is. Definitely the best savory use of zucchini though.
These nests are seasoned and baked to a crispy finish, and when topped with the perfectly baked eggs and some extra red pepper flakes – ooh that rhymed – they just turn even more irresistible!
Oh, and this even makes the cut for Low Carb, Whole30, Keto, Paleo…. for all of those on strict diets.
Crispy Zucchini Egg Nests
Ingredients
- 1 medium Zucchini, 200g
- 2 large Eggs
- 1 tsp Nutritional Yeast, or 2 tsp Parmesan Cheese
- ¼ tsp Salt
- ¼ tsp Pepper
- ¼ tsp Herb Seasoning, or Basil/Oregano/Thyme – Optional
- ¼ tsp Crushed Red Pepper Flakes
Instructions
- Preheat the oven to 350°F.
- Spiralize the zucchini or cut it into extremely thin strips, resembling noodles.
- In a medium bowl, combine zucchini, nooch/parmesan and seasonings. Toss to mix well.
- Line a baking sheet with parchment paper and scoop mixture into two nests on it, creating a well in the middle of each, for the egg.
- Bake for about 12 minutes.
- Remove from the oven, crack an egg into the well of each nest, and bake for another 12 minutes. Longer if you like your eggs well done.
- Sprinkle crushed red pepper flakes on top and serve immediately!
