Jump to RecipeI have no idea where I got the idea for this banana pudding brownie recipe, but it turned out so good, I have no words! Its a fudgy and rich brownie on the bottom, and then you have the smooth creamy banana pudding on top; Pretty much everything you want in a desert recipe.
The best part though, is that it’s actually pretty basic!
Ingredients for Banana Pudding Protein Brownies
These banana pudding protein brownies are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too; The perfect dessert mashup.
- Whey-casein Chocolate Protein Powder needed for high protein brownie and also replaces most of the ‘sugar’. I used part whey-casein Chocolate flavor from Quest Nutrition
- Whey Chocolate Protein Powder; Dymatize ISO here.
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein brownie. Quest Nutrition Multi-purpose here.
- Unsweetened Cocoa Powder, or Raw Cacao Powder
- Whole Wheat Pastry Flour – or a regular all purpose flour
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
- Some Stevia Sweetener
- Non-fat Greek Yogurt contributes to the oil-free part of these high protein brownies since it adds the moisture, and also extra protein
- Almond Milk or regular milk
- Baking Soda
- Vanilla Extract
- Runny Almond Butter or Cashew Butter (no butter or oil to keep this recipe low fat)
I recommend American Dream Nut Butter Brownie Toast Crunch Cashew Butter; Its lower fat and higher protein. The link gives you a discount too.
- Sugar free Chocolate Chips or Chopped Chocolate – I use sugar free ones from Lakanto here (HAYLSKITCHEN for a discount here as well). Lily’s is another sugar-free option!
For the Protein Banana Pudding on top:
- Non-fat Greek Yogurt for a high protein custard
- Vanilla Protein Powder; This is the source of sweetness.I used Quest Vanilla here since it’s whey-casein and blends well with the yogurt.
- Banana flavored Instant Pudding Mix: I used this sugar free and fat free one from Jello
- A bit of Unsweetened Almond Milk
- Vanilla Wafers; I used these keto friendly and sugar free vanilla wafers from High Key
- Sliced Banana
How to make Banana Pudding Brownies with Protein Powder?
This recipe for protein powder banana pudding brownies is extremely easy to make. Just mix and bake the brownies, and then add on the banana pudding on top.
Start with the protein brownie:
- Preheat your oven to 350°F and line a baking pan (about 8”) with parchment paper.
- Whisk all the dry ingredients in bowl – chocolate protein powders, unflavored protein powder, cocoa powder, flour, sweetener, stevia, baking soda.
- Whisk the wet ingredients in a large bowl – yogurt, milk, vanilla, nut butter.
- Add the dry mix to the wet and gently fold to combine. Just be gentle and don’t over-mix the batter. The protein powder will make it too dense.
You should have a thick batter. (Taste batter and add stevia powder if you want it sweeter)
- Add in chocolate chips and fold to combine.
- Transfer the protein brownie batter into pan, spread and bake for about 25 minutes.
tester (toothpick or thin sharp knife) comes out mostly dry.
Then the Protein Banana Pudding:
- LET THE BROWNIES COOL or the banana pudding on top will melt away.
- Combine all pudding ingredients in a bowl: yogurt, protein powder, banana pudding mix and milk.
- Spread banana pudding on top of brownie.
- Add vanilla wafers and sliced banana on top.
Tips for Perfect Banana Pudding Mix Brownies Recipe
- Use room temperature milk and yogurt;
This is so the wet ingredients and dry ingredients can mix well.
- Use Creamy Almond Butter also so that it mixes well into the protein brownie batter.
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the brownies tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter so you have no added sugar in this banana pudding brownie.
- Don’t over-bake the brownies or they might get tough; Remove when the tester/knife comes out mostly dry.
Underbaking a little is okay.
- Use whey-caesin Vanilla protein powder for the pudding so it blends well and smooth with the yogurt and pudding mix.
- Add milk a little at a time so the custard doesn’t get too runny.
- Stir pudding vigorously until smooth; It might take a minute, but you don’t want a lumpy custard.
How to store healthy banana pudding brownies?
Make these banana pudding brownies from scratch as a meal prep dessert, but store it in an airtight container; At room temperature for 1-2 days or in the fridge for a week.
To freeze, individually wrap banana pudding brownie pieces in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.
Alternatives for making Banana Pudding Brownies from Scratch
For the perfect healthy banana pudding brownies, I would highly suggest using the ingredients and brands I recommended; Here’s some alternatives to try if you don’t have them all:
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight; not cups.
- Unflavored Protein Powder: 20g more Flour, but also reduce yogurt to 1¼ cup (281g)
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Almond Butter: Cashew Butter or any nut or seed butter.

- ¼ cup Chocolate Protein Powder, Whey-Casein, 23g

- 2 Tbsp Banana Cream Flavor Instant Pudding Mix, 15g, Sugar free
- ¼ cup Unsweetened Almond Milk, 60ml
- 1 oz Vanilla Wafers, Sugar Free recommended below, 28g
- ⅔ small Banana, sliced, 60g
Instructions
- Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
- In a bowl, whisk cocoa powder, chocolate protein powders, unflavored protein powder, zero calorie sugar replacement, flour, stevia sweetener, and baking soda.
- In a large bowl, whisk together Greek yogurt, almond milk and vanilla.
- Add dry mix to wet, and gently fold until just combined.
- DO NOT OVER-MIX or protein powder will make the brownie dense.
- Add in almond butter/cashew butter and chocolate chips and fold.
- Batter should be thick.
- Transfer batter into pan, smoothen with a spatula or back of spoon.
- Bake for 25-27 minutes or until the top is set. Toothpick inserted into the center should come out slightly damp.
- Remove from oven and let cool completely.
Banana Pudding Top:
- In a bowl, mix Greek yogurt, protein powder, banana flavor instant pudding, and milk until smooth.
- Add milk a little at a time until pudding consistency is reached.
- Spread over cooled brownies.
- Add sliced bananas and vanilla wafers on top.
- Slice and serve!

- For extra gooey brownies, remove at 22 minutes when the tester comes out slightly moist.
