Crispy potatoes first thing in the morning? I’ll take 2 orders please. These Roasted Breakfast Potatoes are so much better than that greasy stuff you get at a restaurant, and so easy, you’re gonna have to try hard to mess it up!

And then I see the those beautiful golden pieces come in the plate in front of whoever I’m brunching with, and mentally drool for a good second or two. But that also gives me a good look at all the oil thats on there and sometimes even slathered on dish itself. That makes me realize actually I made the better choice – for my insides at least.
Since I can’t get what I want out there, I just make my own at home. Toss chopped potatoes in just a tad bit of olive oil with some fresh peppers and onions, season and bake.
They turn out just like the real deal – crispy and brown on the outside but soft and tender on the inside.
My favorite is to season them to that smoky paprika flavor, but a combination of rosemary and thyme does come pretty close.
Healthier Homemade Roasted Breakfast Potatoes
Ingredients
- 2 small Russet Potatoes, 340g
- ¼ cup Onion, Chopped, 40g
- ¼ cup Green Pepper, Chopped, 37g
- ¼ cup Red Pepper, Chopped, 37g
- ½ Tbsp Olive Oil
- ¾ tsp Garlic Powder
- ½ tsp Paprika
- ½ tsp Cumin
- ¼ tsp Salt
- ¼ tsp Black Pepper
Instructions
- Preheat the oven to 425°F.
- Dice the potatoes into ½ inch size cubes.
- In a large bowl, toss all the ingredients together until vegetables are evenly coated with oil and spices.
- Spread the mix evenly on a baking sheet lined with parchment paper bake for 30-40 minutes until potatoes are crisp and brown, shaking the pan halfway.
- Sprinkle with some salt and pepper and serve hot!
