My initial plans were to just sit in bed all day working on the website for my blog. I really didn’t want to try a new recipe coz that would mean an hour of my time going in cooking, setting up the shot and then clicking the pictures, and I still have way too much blog work left if I need to get this thing out by New Year’s.
But then 2 things happened:
- While scrolling through Instagram yesterday I saw a fellow blogger’s post about oatmeal waffles, and the idea blew me away. I know oatmeal pancakes are a thing, but I’d never tried oatmeal waffles. So I bookmarked it for later, saddened that it would probably just get lost somewhere in my huge list of saved posts.
- I received a package from SuperFat with their amazing nut butters. I had reached out to the brand requesting for samples, and they were kind enough to send me variety pack of all their flavors. I couldn’t wait to try them out, but also wanted use them in a recipe and could get a good shot, with the product in it, so I could share the picture with them for their own page.
These waffles were the perfect opportunity for me to return the favor, and check something off my list too.
They turned out just fabulous! Super crispy on the outside, but still soft – and kinda chewy too coz oats – on the inside.
By themselves they were just okay, but with that nut butter? Oh my goodness me! It was out of this world. Kinda wish I had more of that flavor now.
Oatmeal Waffles with Cacao Coconut Butter
Ingredients
- ¾ cup Instant Oats, 75g
- 1¼ tsp Baking Powder
- ¼ tsp Cinnamon
- Stevia Sweetener, 1 tsp sugar worth (Use your brand's Conversion Chart)
- 7 Tbsp + 1 tsp Almond Milk, Unsweetened
- 6 Tbsp Greek Yogurt, about 75g
- ½ tsp Vanilla Extract
Drizzle:
- 1 packet Super Fat Cacao Coconut Nut Butter
- 1 tsp Coconut Oil, Melted
Instructions
- Preheat waffle iron.
- Whisk together waffle ingredients in a bowl. Batter will be thick.
- Scoop out ¼ cup batter into middle of prepared waffle iron.
- Cook for 3-4 minutes.
- Remove from waffle from iron and repeat with remaining batter.
- Stir together coconut oil and nut butter. Microwave at 15 second intervals if needed.
- Spread drizzle on waffles and enjoy hot!
Notes
- To make this Paleo or Vegan, use Coconut, Almond or Soy-based Yogurt.
- Substitute 2 Tbsp of any other nut butter in place of SuperFat.
