Who doesn’t love crispy tortillas filled with gooey molten goodness?! This Crispy Cheesy Spinach Quesadilla has a melty delicious combo on the inside that does some pretty good justice to the crisp on the outside. I could not stop at just one!

I actually used to make them a lot when I was following Keto.
Quesadillas on Keto? Yes, that’s right. I found these amazing tortillas from Tumaro’s which are SO low in carbs, that they actually fit into Keto macros; Even 2 at a time!
Although I don’t follow the diet anymore, I still go out of my way to buy those tortillas coz they’re basically tortilla goals. Low-calorie, low-sodium, high-fiber, whole ingredients, and even taste nice just plain.
Anyway, my go-to used to be a 3 cheese quesadilla with some shredded chicken, but all that fat would be a bit much for this “normal” food style I’m now on.
So I decided to switch it up for a spinach and cheese instead, and added some onion and garlic to cover up the taste-less-ness of that vegetable. (Sorry spinach, just being honest here). Pan fried it on low for more-than-the-usual time to get that crisp, and had a heavenly meal.
Would totally recommend that last part btw. The crispy tortilla crust tastes SO much better than the regular version. Especially when its got such a soft filling.
Crispy Creamy Spinach and Cheese Quesadilla (Low Carb)
Ingredients
- ¼ tsp Olive Oil
- 1 Tbsp Red Onion, Chopped, 10g
- ½ tsp Garlic, Minced
- 1 tsp Jalapeño Peppers, Chopped, 7g
- 1½ cups Spinach, 45g
- ¼ cup Shredded Reduced Fat Mozzarella Cheese, 28g
- 2 8" Low-carb Tortillas, or Whole Wheat
Instructions
- Heat oil in a large non-stick skillet on medium-high and fry onions until translucent.
- Add the garlic, jalapeño and spinach and cook until the spinach is wilted, around 2 minutes. Remove from heat and set aside.
- Place one tortilla on the skillet, cook one side until lightly browned and set aside.
- Place second tortilla on skillet, and flip when one side is lightly browned.
- Top with spinach mixture and cheese, and cover with cooked side of other tortilla.
- Cook for about 3 minutes until bottom tortilla starts to crisp, and flip over.
- Similarly cook other side and slide onto cutting board when done.
- Cut into wedges and serve!
