Want to get rid of that can of tuna that’s been sitting around in your pantry forever? Try this Easy Mexican Tuna Salad: Add some corn, beans and a couple of spices (no mayo though) to give that fish a whole new flavor you didn’t know was possible!
Jump to RecipeHow I know this combination was possible is because a few – more than just a few at this point, something like 8-9 – years ago, I had a beyond amazing canned tuna salad.
Insalatissime. That’s what it was. It was so freakin good, that weird name just got its own spot in my mind.
If I remember right, it was one of my uncles who was visiting from some country in the middle east who had gotten us a couple cans. One spoonful and I wished they were available at my own grocery store. It was nothing like I’d ever had before.
And this wasn’t just me either. My sister had the exact same thoughts.
Anyway, for some reason I remembered it the other day, and really started craving it. So I found it online (good thing I had that name lying around my brain), looked at that picture on the box to see what all went in there, and attempted a recreation.
Now of course this doesn’t taste exactly like Insalatissime, but it sure does come close. Quite close.
The best part though, is that its super healthy. Although Mexican-inspired, this tuna salad has no oil or mayo. Its a fat-free, protein-packed alternative for your packed sandwiches or post-workout lunches.
