Pumpkin Spice makes everything nice! And when you’ve got the fall goodness of pecans and maple in there too, you know you’re going to end up with something absolutely great!
Jump to RecipeAfter hearing all the rave about pumpkin spice this and pumpkin spice that, and never having had any of it myself before, I was really waiting for this fall. Come early Sept, I made a special trip to Trader Joes just to buy one of their shakers of Pumpkin Spice.
The pumpkin-novice that I was, I didn’t realize that pretty much every recipe out there that used this spice-blend also needed actual pumpkin. Well I wasn’t about to drive another 15 minutes back and forth again, so I decided to make this granola that doesn’t really need the squash.
This Pumpkin Spice Maple-Pecan Granola has all the things we love about fall: the spices of pumpkin pie, those flat seeds from the pumpkin itself, crunchy pecans and sweet sweet maple syrup!
A flavorful, crunchy and delicious snack or breakfast option that’s loaded with good carbs, fiber, and healthy fats. Since it uses stevia-sweetened maple syrup, its sweet without all that added sugar.
Perfect with a bowl of cold milk, atop yogurt, or just to gobble up in handfulls! May or may not have picked the last option here.
Tossed with oats and a couple pantry staples, you don’t really need much to make yourself a batch.
If you don’t have pumpkin spice on hand, just a combine a few common spices like cinnamon, nutmeg and cloves. Here’s a recipe I found online.
No stevia-sweetened Maple Syrup? Use some regular pure maple syup or even honey.
No pecans or pepitas? Sub in almonds or cranberries.
Don’t like coconut oil? Vegetable oil it is!
You’ve really got no excuses here.
Pumpkin Spice Maple-Pecan Granola
Ingredients
- 2 cups Rolled Oats, 180g
- 6 Tbsp Pecans, Halved, 44g
- 4 Tbsp Pumpkin Seeds, Pepitas, 40g
- 7 tsp Coconut Oil, Melted
- 2 Tbsp Maple Syrup, Stevia Sweetened, 30ml
- 2 tsp Vanilla Extract
- 2 tsp Pumpkin Pie Spice
Instructions
- Preheat oven to 350°F and line a baking sheet parchment paper.
- In a large bowl, combine coconut oil, maple syrup, vanilla and pumpkin spice.
- Add oats, pecans and pumpkin seeds and mix until evenly coated.
- Transfer mixture to baking sheet and spread evenly.
- Bake for about 10 minutes.
- Shake, then bake for another 10 minutes.
- Serve on top of yogurt or with milk!
- Store extras in an airtight container.

- Let the granola cool completely first.
