The only thing better than avo toast is this Everything Fried Egg Avocado Toast! Top a slice of toasted bread with mashed avocado, a perfectly fried egg and everything bagel seasoning for a special Sunday brunch or even Toast Tuesday!

That creamy avocado mash just goes oh so well with the crunch of toast, that its just one of the best combinations ever.
But why not make it even better?!
The best avocado toast idea!
- Toast a slice of whole wheat bread
- Fry an egg
- Mash some avocado with salt
- Spread the smashed avocado on the toast and top with the fried egg
- Sprinkle on everything but the bagel seasoning!
There’s so many ideas for toppings on avocado toast, but this one really beats them all.
Why?
- The smashed avocado on the toast in itself has a lot nutrition – avocado is one of those good-for-you foods with healthy fats and fiber.
- This avocado toast is with a fried egg, but is still healthy coz it uses barely any oil for frying.
- There’s also a lot of benefits to adding an egg to your good old recipe: Adds some extra protein to go with everything you’re already getting from the avocado.
- It uses whole wheat bread for the toast, so there’s no crappy refined flour there.
- Its got everything! The Everything bagel seasoning just goes so well on top of all of this. Such a divine combination!
And because all of that wasn’t enough, here’s something more you can do:
- Cook that egg until the yolk is just slightly runny. Trust me, its not something you’re going to regret! If runny yolks really aren’t your thing though, just keep it medium or well done as you like it 🙂
- Top it with some cilantro and green onion

Everything Fried Egg Avocado Toast
Ingredients
- 2 slices Whole Wheat Bread
- 1 small small Avocado, 100g, ⅔ cup sliced
- ⅛ tsp Salt
- 2 Eggs
- ¼ tsp Olive Oil
- 1 tsp Every Bagel Seasoning Blend, Recipe below or use store bought
- Green Onion & Cilantro, Optional garnish
Instructions
- In a small bowl, combine avocado and salt and gently mash with the back of a fork.
- Heat a large non-stick skillet over medium-low.
- When hot, pour oil and tilt pan to spread evenly.
- Crack eggs on separately, tilt pan to spread whites, cover, and cook until edges are golden brown. About 2 minutes for runny yolks, 2½ – 3 minutes for medium. Use a rubber/silicon spatula to separate the two if needed.
- Toast the bread in a toaster or lightly fry on skillet for about 1-2 minutes each side, until a golden crust forms.
- Spread the avocado mash on the bread, top with fried eggs and season with EBTB seasoning.
- Garnish with cilantro and green onion and serve!
