Took me a couple tries to nail it, but even those failed attempts were delicious; That’s how good this is!
What goes in?
All you need for these delicious, soft chocolate fudge brownies is mashed sweet potato, creamy almond butter, eggs, raw cacao powder, baking soda and some stevia sweetener.
And then of course to make them double chocolate and fudgier than ever – chocolate chips!
I used Lily’s stevia-sweetened chocolate chips here, these brownies have no added sugar.
Cacao Powder
I used raw cacao powder for this brownie recipe and not the usual cocoa powder.
Cacao is a super food that has a ton of nutrition benefits, especially high in antioxidants and fiber. Another benefit is the minerals like magnesium, zinc, iron and potassium.

Cacao vs Cocoa Powder:

Super duper fudgy brownies!
These fudgy chocolate brownies are made with no butter and no chocolate – which is why they’re healthy and just the best ever!
Even though they have no chocolate, these brownies are made fudgy with the almond butter (also keeps them Paleo).
So all-in-all sweet potato brownies with egg and almond butter for that fudginess and without flour that would otherwise make it airy.
Trust me, this is definitely the best healthy sweet potato brownie out there; No flour, no sugar, no dates, no butter, no oil. Just decadent chocolate brownies!

Super Fudgy Double Chocolate Sweet Potato Brownies (Paleo)
Ingredients
- 1½ cup Sweet Potato, Mashed and Cooled, 337g, See notes to prep
- ½ cup Almond Butter, Creamy
- 2 Eggs
- ¼ cup Cacao Powder
- ¼ tsp Baking Soda
- Stevia Sweetener, 2 Tbsp sugar worth (Use your brand's Conversion Chart)
- 3 Tbsp Chocolate Chips, Stevia Sweetened, 42g
Optional Topping:
- 2 Tbsp Almond Butter, 32g
- 2 Tbsp Chocolate Chips, Stevia Sweetened, 28g
Instructions
- Preheat the oven to 350°F, grease 8” x 8” brownie pan or baking dish and line with parchment paper.
- In a large bowl add mashed sweet potato, eggs and almond butter, and whisk until combined.
- In a small bowl, combine and uniformly mix cacao powder and baking soda.
- Add dry ingredients to wet, and fold with a spatula until combined.
- Fold in 3 Tbsp chocolate chips.
- Pour batter into prepared pan and spread.
- Drop teaspoons full of almond butter on top and use a butter knife to create a swirl pattern. Top with additional chocolate chips.
- Bake for 25 minutes.
- Allow to cool completely (about 1 hour) before slicing or they will be too soft.
Notes
- To prepare mashed potatoes:
- Peel (make sure to remove the thick layer under the skin) chop into 1” cubes.
Cook in boiling water for about 10-15 minutes until easily pierces through with a fork. - Drain and allow to cool completely. Rinse with cold water once or twice to cool faster.
- Mash with a fork or potato masher.
- Peel (make sure to remove the thick layer under the skin) chop into 1” cubes.
- Make sure you let the sweet potato cool before going ahead with the recipe or it will scramble the egg.
- Use room temperature eggs.
- Bake on center rack.
- Cool brownies completely before storing.
- Room temperature: 1-2 days, tightly wrapped in plastic wrap or airtight container.
- Fridge: 1 week in an airtight container.
- Freezer: 6 months, individually wrapped in plastic wrapped and placed in freezer-safe zipper bags.
