Almond Crusted Chicken Tenders are paired with a killer Maple Dijon Sauce. They’re juicy pieces of chicken coated in crisp seasoned almond flour blend. What makes them really special though is sweet and complex maple dijon sauce.
Its a greek-yogurt based sauce with the complex flavor of dijon mustard, hint of sweetness of maple and smokiness of paprika. You really don’t want to skip on that, I can’t recommend it enough.
I may or may not have had some of that sauce just as it is.
I’m really not sure why chicken tenders are always on the kids menu, grown-ups like them too right? Tender, perfectly cooked chicken with a crispy, crunchy outside; Which adult wouldn’t go for something like this? With seasoned almond flour replacing the traditional breadcrumbs, these strips are Paleo- and Keto-friendly.
They’re also baked instead of deep fried, taking them from good to just great! This is how you can have a flavorful, crunchy fast-food snack and be healthy at the same time.
Almond Crusted Chicken Tenders with Maple Dijon Sauce
Ingredients
- 4 oz Chicken Breast, Boneless & Skinless, 112g
- 4 Tbsp Ground Almonds/Almond Flour, 30g
- ¾ tsp Garlic Powder
- ¼ tsp Dried Basil/Oregano
- ¼ tsp Paprika
- ⅛ tsp Salt
- ⅛ tsp Black Pepper
- ½ Egg, for coating
- Cooking spray/oil, for greasing
Maple Dijon Sauce:
- 5 Tbsp Greek Yogurt, about 60g
- 1 Tbsp Dijon Mustard, 15g
- 1 tsp Stevia-sweetened Maple Syrup, 5 ml
- ¾ tsp Lemon Juice
- ½ tsp Paprika
- ¼ tsp Black Pepper
Instructions
- Preheat the oven to 400°F, or use an air fryer.
- Line a baking sheet with parchment paper and lightly grease with cooking spray or oil.
- Slice into side of chicken breast to make into about ½ inch thick fillets, and cut into 6 strips.
- Combine Almond flour and seasonings in a shallow bowl, and whisk egg in another.
- Dredge each strip in egg, followed by almond mixture, and place on prepared baking sheet or air fryer base. Hold tenders at ends or use tongs.
- Bake for 10-15 minutes, flipping halfway through, until firm and cooked through.ORAir fry for about 8 minutes at 370°F.
- In a small bowl, combine the ingredients for the sauce.
- Dip in dip and enjoy!

- To make this Paleo, use Coconut or Almond based Yogurt.
