As if you needed another excuse to have froyo, here’s a Maple-Banana-Walnut Yogurt Bark recipe. The crunch of the walnuts with just the right hint of maple paired with the fruity flavor of banana. What can go wrong here? Nothing I can think of.
Jump to RecipeI really like Greek Yogurt and have it for my evening snack at least 3-4 times a week. But of course it tastes kinda sucky just by itself, so I add some stevia sweetener and vanilla extract to it. That giant bowl goes down in less than a minute then.
Just so soothing and cool.
But the thing is this is always in my office, so the other day when I had planned to have yogurt at home, I decided to try something different and get a blog post out of it. So then came this yogurt bark.
Its an easy-to-make treat and a cool and creamy way to end a meal or just snack at any time of day! Well, yogurt *is* healthy, so….
P.S. Feel free to experiment with your choice of toppings and switch out the greek yogurt for any other!
Maple-Banana-Walnut Yogurt Bark
Ingredients
- 1 cups Nonfat Greek Yogurt, 200g
- ¾ tsp Vanilla Extract
- 1½ tsp Stevia-sweetened Maple Syrup, 7.5ml
- OR
- Stevia Sweetener, 2 tsp sugar worth (Use your brand's Conversion Chart)
Toppings:
- ⅓ small Banana, ¼ cup sliced, 37g
- 3 Tbsp Walnuts, Chopped, 22.5 g
- 1 tsp Stevia-sweetened Maple Syrup, 5ml
- ½ tsp Chia Seeds
Instructions
- Add yogurt, vanilla and sweetener in a bowl and whisk to combine.
- Pour yogurt on a parchment-lined baking pan and spread to form an even layer about ¼ inch thick.
- Top with walnuts and banana slices, sprinkle chia seeds and drizzle maple syrup over it.
- Freeze uncovered until solid, about 4 hours.
- Break into pieces and serve!
Notes
- Use Coconut, Almond or Soy-based Yogurt to make this Paleo or Vegan.
- Switch out the toppings for anything of your choice!
- Freeze 2-3 months in an airtight container.
