I feel like I say this every time, but this is probably my new favorite pasta recipe. It’s creamy, avocado-ey, and just beautiful!
The best part though, it takes just 10-12 minutes – which is the time it takes to cook the pasta! That’s coz the sauce and “chicken” can just happen while those carbs are cookin’.
Avocado Pasta Sauce
This beautiful, vibrant green sauce comes together in about 2 minutes!
All you need for this simple yet tasty avocado pasta sauce is:
- Avocado
- Spinach
- Pasta Water
- Nutritional Yeast
- Lemon Juice
- Minced Garlic
- Salt & Pepper
To keep this sauce (and pasta) Vegan and dairy free, I used nutritional yeast (it really does go well with the avocado flavor), but feel free to sub in grated Parmesan cheese instead. You want to use twice the amount of the nutritional yeast, so that would be 1 Tbsp worth.
A healthy Avocado Pasta!
This delicious avocado pasta sauce has no dairy, no nuts and no oil, making it not only dairy-free, but also a lot lighter in terms of the calories and bad fat content.
The spinach adds a tiny dose of veggies in there, so you can get a bit of your greens in too.
Most pasta recipes for something like an avocado pesto sauce call for basil, but this one is without any of that and uses spinach as that “leafy” ingredient.
The avocado adds in a good amount of healthy fats and a ton of fiber, while the nutritional yeast gives the sauce a protein bump with a bit of a fiber boost again too.
To not waste away the nutritional benefits of the avocado sauce, I used Whole Grain Penne – using whole grains definitely makes a world of a difference.
You can also sub in some other alternative pastas if you like, both in terms of shape and core ingredient. Rotini, Ziti, Spaghetti, Fettuccini, so many options! As for the pasta ingredient, there’s chickpea-based pastas, lentil-based, rice-based and even veggie-based products out there.

How to cook?
This is one of the of the most easy Vegan pasta recipes you will come across. All you have to do is:
- Cook the pasta
- Blend all the ingredients for the avocado sauce in a food processor – no blender needed here.
- Toss the pasta and sauce together.
And there you have it: The perfect Vegan Avocado pesto pasta dinner in under 15 minutes!
What to pair this with?
To make a complete meal out of this avocado pasta recipe, I cooked some Gardein chicken to go with. Definitely a good combo.
You can pair this with any meat or plant-based protein of your choice.
A good slice of garlic bead would be amazing too!
Another recommendation: toss in some chopped pecans for a bit of crunch.
Can you keep this pasta?
I would say this dish will last about a day in the fridge (assuming you have leftovers that is). The spinach part isn’t too much of an issue, but since the sauce is made from fresh avocados, it will start to brown
If you really want to make this ahead or meal prep, you can cook the pasta in advance and keep that ready, but I would really recommend making the sauce when you’re ready to dig in; It’s just so much better!

Unbelievably Creamy Avocado & Spinach Pasta (Vegan)
Ingredients
- 2½ oz Pasta (71g)
Sauce:
- ⅔ small Avocado (about 66g)
- ½ cup Spinach (15g)
- 2 Tbsp Pasta Water
- 1½ tsp Nutritional Yeast (2.5g)
- 1 tsp Lemon Juice
- ⅓ tsp Minced Garlic
- ⅛ tsp Salt
- ⅛ tsp Black Pepper
Instructions
- Bring water to a boil in pot, add pasta, and cook for about 7-10 minutes (according to package instructions). Reserve 2-3 Tbsp water, drain, return to pan, and cover to keep warm.
- Blend avocado, spinach, 2 Tbsp pasta water, lemon juice, nutritional yeast, garlic, salt and pepper in a food processor or blender until creamy and smooth, about 15 sec.
- If the sauce is too thick, add more pasta water, 1 tsp at a time.
- Add sauce to pasta, toss to combine, and serve immediately!
Notes
- In an airtight container in the refrigerator for 1 day.
- Sauce will brown if kept too long, and this dish is best served with fresh sauce.
