Never really been a fan of lettuce wraps here, but these Spiced Chickpea Lettuce Cups really caught my attention. They’re perfect for a quick lunch and a great sandwich alternative too!

If you’ve got a can of chickpeas, you just need 5-10 minutes to get this out!
Literally just microwave the chickpeas, toss it in the spice blend, and then assemble the cups. I really don’t think any recipe could get easier than this.
Great for a quick lunch, especially one on-the-go. They’re also lighter in calories than a sandwich, full of protein, and rich in fiber as well. What’s even better is that they’re so diet-friendly: Vegan and GF!
Warm Spiced Chickpea Lettuce Cups
Ingredients
- 1½ cup Chickpeas, Canned (390g) or Cooked from dry(111g)
- 1¼ tsp Cumin, Ground
- 1¼ tsp Chili Powder
- 1¼ tsp Paprika
- ¾ tsp Garlic Powder
- ¾ tsp Onion Powder
- ½ tsp Cayenne Pepper
- 16 leaves Lettuce Romaine (small) or Little Gem Lettuce, 136g
- 24 strips Red Onion, Thinly Sliced, ¼ cup, 40g
- ¼ cup Cucumber, Sliced, 30g
Instructions
- Drain the chickpeas but don’t let them get too dry.
- Transfer to a bowl a large bowl and warm in a microwave for about 30 seconds.
- In a small bowl, combine the spices to mix evenly.
- Add spices to chickpeas and toss to coat evenly.
- Divide lettuce leaves in 2’s placing them on top of each other to make 6 cups.
- Spoon out chickpeas, dividing equally, onto lettuce leaves and top with sliced onions and cucumber.
- Squeeze some lemon juice on the top if desired, and serve!
