Jump to RecipeI grew up living on chicken, but over the last probably 6 months I would say, I’d barely been eating any form of meat.
I didn’t go Vegetarian or Vegan or anything, its just that I would get enough protein from all the other foods I ate that I’d only ever eat a handful of chicken if I needed to hit my macro numbers with a source of pure protein.
For some odd reason though, I’ve fallen in love with it again. Probably not the best time though since its Lent and being Catholic, its what I’d usually give up as a sacrifice during this time back at home.
But given that it isn’t really one of those things “I can’t live without”, it didn’t really make much sense.
Anyway, let’s talk recipe.
What are Chicken Tenders?
They’re the meat that comes from the tenderloin muscle of the chicken. Its not the same as breast meat, but is the narrow strip of meat located just below the breast.
In terms of taste, it tastes just like chicken breast, and is also a white meat.
People also call them chicken fingers or chicken fillets a lot.
Cooking Chicken Tenders
Since this cut of meat is so slim and “tender”, it cooks a lot faster than regular chicken breast, even if the breast is cut into the same size.
The most common means of cooking this cut of meat is by dipping it in whisked eggs, coating it in bread crumbs and then deep frying or baking it.
Its all that stuff you get at fast food joints. Not the best for your insides to be honest!
Greek Chicken Tenders
To cook this light white meat in a way that’s also light and white – but still super flavorful, here’s a recipe that’s not only good for your insides, but tastes delicious too!
Make a greek yogurt, garlic and lemon marinade for the chicken, and set half of it aside so you can also bake the chicken in the sauce later..
To give it some extra flavor, I also add oregano, parsley and olive oil to the mix. And then of course the salt and pepper.
Stir the chicken with the mix let the meat marinate for at least 30 minutes.
To cook:
To make this a healthy homemade chicken tender recipe, bake the lemon-yogurt marinated meat in the oven.
Place the chicken tenders in foil on a baking sheet and bake them.
Take them out after 10 minutes, apply the rest of the marinde on both sides of the chicken, flip the meat and bake for another 10 minutes.
Its just that easy!
Why is it healthy?
The chicken tenders are marinated in greek yogurt, lemon and garlic and then baked. There’s no egg, no breading, no flour and no frying.
I made this greek chicken with tenders, but you can also use breast meat; Just make sure its marinated and then baked so its still just as healthty!
Special diets?
No flour, gluten-free and egg-free! This also makes it Keto!
Use a coconut or almond based yogurt and you have a Paleo chicken marinade!

Baked Almond Crusted Chicken Tenders
Baked Lemon-Yogurt Greek Chicken Tenders
Ingredients
- 1 lb Chicken Tenders (454g)
Marinade:
- ⅓ cup Greek Yogurt (about 66g)
- ⅓ cup Chopped Parsley
- 1½ Tbsp Lemon Juice
- 1 Tbsp Olive Oil
- 2 tsp Minced Garlic
- 1½ tsp Dried Oregano
- ½ tsp Black Pepper
- ½ tsp Salt
Instructions
Marinate:
- In a small bowl, stir together ingredients for the marinade and set aside half.
- Place chicken tenders in a large bowl, add half the marinade and massage to coat.
- Cover with plastic wrap and let marinate for 30 min-3 hours.
Bake:
- Preheat the oven to 375°F. Line a baking sheet with foil and lightly grease. If you have an oven-proof rack, place it on the sheet and grease with non-stick spray or oil.
- Place marinated chicken on baking sheet.
- Bake for 10 min.
- Baste chicken with reserved marinade, flip, baste other side, and bake another 10 min.
- Garnish with parsley and serve with roasted veggies.
