Relation-chip status: In love with these Chocolate Chip Protein Cloud Cookies! They’re light and airy, just like eating a cloud! As a bonus, they’re full of chocolate chips, packed with protein, and also low-carb/keto.

I found a really good chocolate chip cookie recipe online, but scaled it down to a ¼ of the amount coz I didn’t want to test a batch with 24 cookies in it. I try to do my first-times for all recipes in just a single serving or maybe 2-3 because I don’t want to waste ingredients if things don’t turn out right.
But the thing is I accidentally used the original amount of eggs. So 4x the amount of eggs for a normal cookie recipe. The “dough” was quite runny, so I should have realized this immediately, but oh well.
Put the second tray in the oven, and then decided to double-check the recipe. I was super upset and almost threw the batch in the bin.
For some reason I decided to try them, and oh my! They were so good, and with so many chocolate chips everywhere.
Now since I had so much dough batter, I got way more cookies than I expected! Such a good mistake.
Chocolate Chip Protein Cloud Cookies (Keto & Paleo)
Ingredients
- ¼ cup Nut Butter, 64g
- 3 Eggs
- ¼ tsp Vanilla Extract
- ½ cups Almond Flour, 60g
- ½ scoop Vanilla Protein Powder, 15g, about 2½ Tbsp, or extra almond flour
- 1 tsp Baking Powder
- Stevia Sweetener, 1 Tbsp sugar worth (Use your brand's Conversion Chart)
- 3 Tbsp Stevia Sweetened Mini Chocolate Chips, 42g
Instructions
- Preheat oven to 375°F.
- Mix nut butter, eggs and vanilla in a large bowl until uniform.
- Add rest of the ingredients and mix well. The dough will be a little runny.
- Scoop out 1 Tbsp of dough at a time onto a cookie sheet, about 2 inches apart.
- Bake for 11 minutes or until edges are nicely browned. They will seem soft, but don’t over-bake!
- Let cookies cool completely before enjoying!
