Jump to RecipeI actually had no intention of making chips when I bought that pound of Zucchini the other day. My actual plans involved a lot of zoodles – zucchini noodles that is.
I tried them for the first time last week, and really liked them. Moreover, they were quite perfect for my low-carb dinner lifestyle. I could basically have a lot of noodles without having to worry about carbs at all, so I stocked up.
And then when I repeated that same recipe 2 nights ago, lets just say things changed. Changed a lot.
So I looked up some better ways to use up a lot of zucchini, and these Baked Zucchini Chips were just what I needed!
The zucchini did shrink quite a bit, so I got to have even more veggies in just one serving! And that too as spicy crispy chips. Total win-win!
Crispy Baked Zucchini Chips
Ingredients
- 1 large Zucchini, about 225g
- 2 tsp Olive Oil
- ½ tsp Salt
- ½ tsp Black Pepper
- ½ tsp Paprika
- ¼ tsp Onion Powder
- ¼ tsp Garlic Powder
Instructions
- Preheat oven to 235°F.
- Thinly and evenly slice the zucchini with a knife or mandolin to ⅛” thickness.
- Transfer slices to a large bowl, add oil and seasonings, and stir until properly coated.
- Place the zucchini slices on the prepared baking sheets.
- Bake for about 2 hours until crisp and golden. If some chips are still damp, remove the crisp ones and place the damp chips back in the oven for a few more minutes.
- Remove and allow to cool on a paper towel.
- Serve immediately or store for later.
