An easy, healthy and delicious baked Maple Dijon glazed Chicken Breast with Asparagus on the side. All the oven-fresh flavor and nutrition ready in under 30 minutes!
Jump to RecipeI may or may not have accidentally purchased over 10lbs of chicken, so I’m on an all-chicken-everything rampage right now.
I’d been meaning to do a maple dijon something – salmon to be more specific – but those filets were too far back in my freezer. So it was either emptying out everything in front and having to play a game of tetris to fit it all back, or make some good use of all that chicken.
Easy way out always.
An easy maple mustard chicken breast!
All you need for this simple recipe are a few simple pantry staples:
- Chicken Breast
- Asparagus
- Maple Syrup
- Dijon Mustard – I used coarse grained here for more texture and flavor
- Minced Garlic
- Olive Oil
- Butter – For the maple dijon glaze
- Salt & Pepper – Seasoning is a must!
To make this baked maple mustard glazed chicken healthy, I used a sugar-free maple syrup from SweetLeaf Stevia so there’s no sugars in here.
How to cook the chicken and asparagus (in the oven!)
- Season the chicken with salt and pepper and lightly sear it on a skillet in the olive oil so it nicely browns.
This isn’t really to cook the chicken, just get that brown edge, so it’s an optional step. - Stir together maple syrup, dijon mustard and portion of the butter and garlic to make the glaze for the chicken breast.
- Make a foil pack, pour in ⅓ of the maple dijon mustard marinade and place the chicken on there. Pour another ⅓ on top of the chicken and spread it around.
- Place the foil pack on a baking sheet, and asparagus beside it. Season the veggies with salt and pepper and toss it with the rest of the garlic and butter.
- Bake the chicken and vegetables together in the oven at 350°F for 20 minutes.
- Use the rest of the maple dijon marinade/glaze as a dressing to top the baked chicken and asparagus.
How this is healthy:
- The normal version of this recipe is a honey dijon. So that would be chicken, dijon mustard and honey, but I decided to use maple syrup in this recipe since I could have the no-sugar option and keep it healthy.
- The baking in the oven step is another contributor to this.
- I also use a lot less butter/oil than most recipes call for.
- Aaand, asparagus baked in there too so there’s veggie intake.

Easy Bake Maple-Dijon Chicken and Asparagus
Ingredients
Chicken:
- 5 oz Chicken Breast
- ⅛ tsp each Salt & Pepper
- ⅛ tsp Olive Oil
- 1½ tsp Butter, Melted
- 2 tsp Maple Syrup, Stevia-Sweetened, 10ml
- 2 tsp Whole Grain Dijon Mustard
- 1½ tsp Minced Garlic, 2-3 cloves
Asparagus:
- ½ small bunch Asparagus, about 12 medium spears, 192g
- 1 tsp Minced Garlic
- ½ tsp Butter, Melted
- ⅛ tsp each Salt & Pepper
Instructions
Prep:
- Preheat oven to 350°F.
- Cut a 12 x 8 inch sheet of heavy-duty foil and fold up all 4 sides of the foil to make a container shape. Place on a rimmed baking sheet.
- Pound chicken breast to even thickness, about 1- 1½” and season both sides with salt and pepper.
Cook:
- Heat oil a nonstick skillet over high and cook chicken about 30 seconds each side until browned.
- In a small bowl stir together melted butter, maple syrup, dijon mustard and garlic.
- Pour ⅓ the sauce in the foil container, place chicken on, and move around to coat bottom.
- Pour ⅓ sauce over chicken and spread evenly. Reserve ⅓ sauce.
- Arrange asparagus in a single layer on the baking sheet, beside the foil bowl.
- Spread remaining melted butter and garlic over asparagus, sprinkle on salt and pepper, and use hands or tongs to mix well.
- Bake for about 20 minutes until chicken is cooked through and asparagus is crisp-tender.
- Top with reserved sauce and serve!
