Tossed with peas, carrots and scrambled eggs, this easy Cauliflower Fried “Rice” is a great low-carb and paleo alternative to Chinese take-out. More of a main dish than a side!
Jump to RecipeCauliflower Rice
This is a Keto/Low Carb substitute for the real thing. Its made by pulsing the vegetable in a food processor until it gets a rice-like consistency.
So then you can just use it for most recipes that call for rice.
The thing with cauli rice is that its completely tasteless unless you add the right seasonings in the right ratio with some good mix-ins.
Without all that, it tastes quite disgusting to be honest, and I’d be swallowing it down with water.
Fried Rice
This easy side dish is made by just tossing together rice, a bunch of veggies, scrambled eggs, soy sauce, and other add-ins. Shrimp and Chicken are quite popular options.
Cauliflower Fried Rice
As a grain-free keto alternative, this recipe uses riced cauliflower in place of regular rice.
To keep this Paleo, sub the soy sauce with coconut aminos. They’ve got a lot less sodium too!
Pairings?
I haven’t made Cauliflower Rice for about 2 months now, because the last few times I made it, I just couldn’t stomach it.
But I’m making Ginger-Garlic Shrimp for dinner tonight, and I couldn’t think of a veggie-based side dish that would pair better.
Finally a cauliflower rice dish that I like and is actually worth sharing!
