Mid-week: Time for a dose of comfort food. These Easy Cheesy Mashed Potatoes are soft, smooth, creamy and ultra-cheesy! Don’t be surprised if they turn out to be your entree, because a side order won’t cut it!

I don’t know how they do it and what they put in there – Speaking of, I should go look that up and try to recreate it – but they always taste amazing, irrespective of which branch I go to.
Just checked it out and turns out they use Gouda and Horseradish. Next recipe idea.
Anyway, I used Cheddar for mine, so they have a sharper, creamier flavor (and not the sweet, nutty one from Gouda), but still so fab!
And then to make it Vegan – coz it’s also a low-fat alternative – I use my bae Nutritional Yeast. Just as cheesy!
They’re also super simple to whip up; Hence the “Easy” in the name. I don’t think I’m going to be going out for my mashed potato-fix anytime soon.
Easy Cheesy Cheddar Mashed Potatoes
Ingredients
- 2 small Russet Potatoes, 340g
- 2 Tbsp Almond Milk
- 1½ Tbsp Green Onion, Finely Chopped, 10g
- ½ tsp Italian Seasoning
- ¼ tsp Salt
- ¼ tsp Pepper
- ¼ cup Cheddar Cheese, Shredded, or ¼ cup Nutritional Yeast for Vegan
Instructions
- Cut the potato into large wedges, place in a pot over medium heat and cover with water.
- Bring to a boil, then reduce heat to a low simmer, cover and cook for 15 minutes until potatoes are tender but still firm.
- Drain and transfer potatoes into a bowl.
- Add the milk, green onion, Italian seasoning, salt and pepper, and mash until smooth and uniform.
- While still hot, fold the cheese into the mash until melted and even.
