Jump to RecipeDon’t even ask how long it took me to come upon this recipe. I just couldn’t for the life of me decide what I wanted to have for dinner tonight. Yes, its a breakfast pizza, but I had it for dinner.
Anyway, I had a BBQ Chicken Pizza for dinner last night, and wanted something along those lines tonight too. But I also wanted to turn it into a recipe, so I thought of a BBQ Chicken Wrap-pizza or Wrap-quesadilla.
10 minutes later, I kinda wanted eggs. So then I moved on to a Scrambled Eggs Breakfast Pizza. Looked up some recipes, and decided to go for scrambled eggs + spinach + sausages on pizza.
I thought that was the end of it, so I Googled “breakfast pizza” to get some inspiration photos. And then I saw pizzas which had what looked like a fried egg/sunny-side-up on it. SO much more photogenic!
So then I decided to do a simple breakfast pizza with spinach, mozzarella, and the eggs.
But when I clicked on one of the inspo pics I liked and read the name “Eggs Florentine Breakfast Pizza”, that was it. There was no saying no to that.
4 recipes later, and I ended up with this stunning and scrumptious meal. Breakfast for dinner goals indeed.
To be honest, its even breakfast for breakfast goals!
The base
To keep this pizza Low Carb and Keto, I used a Cauliflower Crust from KBosh.
The crust is made using cauliflower and no real flour, its a gluten free pizza crust.
The topping
Its basically spinach and eggs.

And then bake it all on that crust, oh my. It was just heavenly!
A real homemade delicacy.
I just added the same thing for my dinner plan tomorrow.
Eggs Florentine Breakfast-for-Dinner Pizza
Ingredients
- 1 8" KBosh Pizza Crust, or crust/tortilla of choice
- ½ cup Almond Milk
- ¼ tsp Tapioca Starch
- 2 cups Spinach, Chopped (60g)
- ¼ tsp Garlic Powder
- 3 Tbsp Shredded Mozzarella, 21g
- 1 Egg
Instructions
- Preheat oven to 400°F.
- If using KBosh crust, heat a large skillet on medium and cook each side of crust for 2 minutes until golden. Set aside.
- Pour milk on skillet, let simmer, add starch and whisk.
- Add spinach and stir until it starts to thicken and spinach is wilted. Add garlic powder and stir to combine. Set aside to cool.
- Spread spinach mixture on crust and top mozzarella.
- Crack egg onto pizza.
- Bake for 10-12 minutes until cheese starts to slightly brown, egg white is set but yolk is runny.
- Let cool 5 minutes before slicing.
