Waiting to wrap up the week with these Curried Chicken & Broccoli Wraps. Just thinking of all those aromatic and strong flavors in a crispy (or soft) shell right now is making me drool.
Jump to RecipeThis is without a doubt among my top 3 favorite savory recipes. I have had it day after day for lunch, looking forward to it every time. Since i’ve made it so often, I can vouch for the perfection of that ingredient ratio. I can probably do that for most of my recipes, but this one’s a little special.
Just to give you an idea of how obsessed I am with it, when I ran out of the lavash bread I use, I called visited 4 grocery stores, called 5 others, requested a special order at 2 more, until I finally found a huge stock at a store 15 minutes away!
Of course I could have tried a different variety from the same brand or the whole grain from different brand, but I didn’t want to risk ruining the dish for myself.
First world problems, I know, but come on. How would you feel if you really really liked something, made a small change to it once, and then just started hating it altogether? Does not sound too nice does it?
Long story short, I would 11/10 recommend this recipe!
Flavorful Chicken & Broccoli Curry Wraps
Ingredients
- 2 Whole Wheat Lavash Wraps, or Tortillas
- ½ tsp Olive Oil
- ¼ cup Onion, Chopped, 40g
- 1½ tsp Garlic, Minced
- ½ cup Tomato, Diced, 100g
- 2 tsp Curry Powder
- ¾ tsp Turmeric
- ⅔ tsp Cayenne Pepper
- ⅔ tsp Cumin
- ½ tsp Black Pepper
- ¼ tsp Cinnamon
- ¼ tsp Red Chili Powder
- ¼ tsp Salt
- 3 cup Broccoli, Chopped, 270g
- 1 cup Chicken Breast, Cooked & Shredded, 80g
Instructions
Prepare filling:
- Place broccoli in a bowl, cover with a damp paper towel and microwave on high for 2 minutes. Set aside.
- Heat the oil in a large pot over medium heat, and fry onions and garlic for 2 minutes until translucent.
- Stir in the diced tomatoes and spices, and about ½ cup water. Let cook for about 3-4 minutes until the spices are fragrant.
- Add the broccoli and chicken, stir, bring to a low simmer and cook for around 3 minutes, until slightly thickened and chicken is warmed through.
Assemble:
- Place wrap on a work surface.
- Spoon the filling from one end, upto ¾ the way till the other.
- Gently roll up, pushing the filling down to make the wrap as tight as possible.
- Cut up and toast in the oven for about 5 minutes or until crispy. Microwave on high for 2 minutes as an alternative.
