Mediterranean Chicken Kebabs: Bites of chicken marinated in warm spices, threaded on skewers with colorful peppers and onions and grilled to perfection!
A flavorful recipe that’s great for an outdoor summer grill or indoor winter dinner.

I found some metal skewers I had at the back of a kitchen cabinet when I was looking for my hand mixer attachments yesterday, and that’s all the inspiration I needed.
Then came the hard part. I really wanted to go for a yogurt marinated chicken skewer recipe, but I’ve been doing quite a few of those recently, so I went for something new.
Middle-Eastern flavored kabobs.

Middle Eastern/Mediterranean Chicken Marinade for Grilling
A long list of spices and seasoning here to give to give these marinated chicken kabobs it all that Mediterranean flavor so you get the best results.
Chop up the chicken into bite-sized pieces about 1½” cubes and toss them in a bowl with the marinade ingredients – olive oil, lemon juice, garlic, spices (paprika, oregano, thyme, and a bit of cardamom and nutmeg), salt and pepper.
With this simple list of ingredients, the marinade for these chicken kebabs is paleo keto-friendly too!
Cover the bowl and let the chicken marinate in the fridge for about 2-4 hours. Don’t go longer than 8 hours though.
I used chicken breast to make these kebabs healthy, but you can use chicken thighs as well if you want them extra juicy.
Either way, this is a super easy and delicious recipe.
How to make Mediterranean Chicken Skewers
Once the chicken is well marinated with all the spices, thread the pieces along with the chopped bell peppers and onions on skewers. You should have about 5-6 pieces on each.
If you plan to use wooden skewers, be sure to soak them in water for about 30 minutes first so they don’t burn when you grill (or even bake) them.
How to cook Mediterranean Chicken Skewers on a grill pan?
Heat a grill pan over medium high and cook the Mediterranean spiced kabobs for about 10 minutes. Don’t forget to flip them halfway.
Since the kabobs are marinated with oil along with the blend of garlic, lemon and flavorings, you don’t need to oil the pan.
How to Bake or Broil Mediterranean Chicken Kebabs
If you prefer to bake these kebabs in the oven, place the skewers on a baking sheet and cook at 425°F for 8-10 minutes,. Flip halfway again.
You can also broil them for about 8 minutes if you prefer.
What to serve with these Chicken Skewers
Serve these juicy grilled chicken skewers with something subtle like a hummus, tahini sauce or lightly seasoned grilled vegetables. This really brings out the flavors of the meat. Warmed pita would be amazing too!

Does this keep?
For sure! Keep in the fridge for even 3-4 days.
Make sure to take them off the skewers first and use an airtight container, they’ll stay as juicy as ever. Microwave the chicken kebabs, onions and bell peppers alike for about 45 seconds to reheat.

Juicy Grilled Mediterranean Chicken Kebabs
Ingredients
- 1¼ lbs Chicken Tenders, 567g
Marinade:
- 2 Tbsp Olive Oil
- 1 Tbsp Lemon Juice
- 1 Tbsp Minced Garlic, about 3 cloves
- 1 tsp Paprika
- 1 tsp Oregano
- ½ tsp Thyme
- ¼ tsp Green Cardamom, Ground
- ¼ tsp Nutmeg
- ½ tsp Black Pepper
- ⅓ tsp Salt
Peppers & Onions:
- ½ Red Bell Pepper, 55g
- ½ Green Bell Pepper, 55g
- ½ medium Red Onion, 56g
Instructions
Marinate:
- Dice chicken into 1½” pieces.
- In a large bowl, stir together ingredients for the marinade.
- Add chicken tenders, and massage to coat.
- Cover with plastic wrap and let refrigerate for about 2-4 hours.
Prep:
- If using wooden skewers, soak them in water for about 30 minutes. This is needed to prevent them from burning.
- Chop peppers and onions into 1½” pieces.
- Thread a combination of about 5-6 pieces of chicken, red and green peppers and onions on skewers.
Cook:
- Heat a gas grill or non-stick grill pan over medium and cook each side about 5 minutes (10 minutes total).

- Garnish with cilantro and serve with a tahini sauce, hummus or grilled veggies.
Notes
- To bake:
- Preheat the oven to 425°F. Line a baking sheet with foil and lightly grease.
- Place skewers on sheet and bake for about 8-10 minutes, flipping halfway.
- To broil
- Place skewers on greased or foiled baking sheet and broil for 10 minutes, flipping half way.
