Jump to RecipeCarbonara is one of those popular pasta dishes that I kept hearing about, but never knew what it was. I guess I didn’t bother looking it up either coz I didn’t really eat pasta until a few months ago, but that’s besides the point.
So how a carbonara works is you basically toss the pasta in whisked eggs. You need to make sure the pasta is still hot so the eggs cook, but also be quick wit it or you’ll just end up with pasta + scrambled eggs.
If you do it right though, you get a perfectly glossy pasta sauce.
Its easy enough to put to together for a down-time meal, and also classy enough for a party. This silky tangle is one you’re actually going to miss when it’s gone!
Lightened Up Summer Vegetable Carbonara with Bacon
Ingredients
- 75 g Whole Grain Spaghetti or Linguini
- 1½ cups Spinach, 45g
- ⅔ cup Broccoli, Chopped. 60g
- 3 Tbsp Red Onion, Chopped, 30g
- 3 Tbsp Red Pepper, Chopped, 28g
- 3 Tbsp Green Pepper, Chopped, 28g
- 3 Tbsp Corn Kernels, 25g
- 1 slice Bacon
- ¾ tsp Garlic, Minced
- 1 large Egg
- ¼ tsp Salt
- ¼ tsp Black Pepper
- ⅛ tsp Cumin, Ground
- ⅛ tsp Coriander Powder
- 3 Tbsp Parmesan, Grated
Instructions
- Bring 3½ cups water to a boil in small pot, add pasta, and cook for about 10 minutes.
- Reserve 2-3 Tbsp pasta water. Add veggies to the pasta, cook for a minute, and drain.
- In a small bowl, whisk the egg, spices, and half the cheese.
- Chop and cook bacon in a large skillet on medium-high until crispy, about 5 minutes. Reserve half the fat in skillet and transfer slices to a paper towel-lined plate to drain.
- Add garlic to skillet and fry for a minute. Turn off the heat.
- Transfer cooked pasta to skillet, and mix with garlic until even.
- Add egg-cheese mixture and toss quickly with tongs to coat the pasta and prevent egg from scrambling. The egg will cook if the pasta is still hot.
- Add rest of the cheese and cooking liquid to form a silky sauce.
- Season with salt if desired, and top with more shredded parmesan.
- Serve immediately!
