Low-Carb Palmini Carbonara with Kale and Sausages is a Keto-follower, Pasta-lover’s dream come true. Hearts of Palm noodles, butter-garlic kale and spicy jalapeño chicken sausages are tossed in a cheesy-egg mix to create this glorious concoction.

I was walking down the aisles at Sprouts Farmers Market – just realized its called a Farmers Market even thought it’s a grocery store – in search of a particular low-carb noodles brand I saw on their website, and noticed this Palmini thing nearby.
Took a closer look because the package was so bright and clean, and I was shook! I have never seen any low carb/ keto pasta like this, I’m certain I never will!
I had tried something out back then, but recently reached out to the brand regarding samples, and they were nice enough to send me some.
What is Palmini?
Palmini is the brand name, and their products are pastas made from a vegetable called Hearts of Palm. So basically, you’re getting to eat something that looks and feels like pasta – and even tastes like if it you cook it right – but without all the carbs.
This Linguine is a perfect keto, low carb and paleo substitute for noodles, and spaghetti even!

How to cook Palmini?
Since this is essentially a vegetable noodle like zoodles (zucchini noodles) but with hearts of palm instead, you don’t need to boil it in water like you would a regular pasta.
You just drain the packet and rinse out the pasta (rinse it well) and then heat it with whatever sauce you’ve got.
How to cook Carbonara?
So how a normal spaghetti carbonara works is you basically toss the pasta in whisked eggs. You need to make sure the pasta is hot enough to cook the eggs, and be quick with it so you don’t end up with scrambled eggs + pasta.
Do it right and you get a super glossy sauce.
My Low-Carb Palmini Carbonara ?
This just came from the last bit of kale I had in my fridge, my sausage craving this afternoon, and the fact that “carbonara” would be a good play on words with the low-carb. Palmini
So for my keto and low carb spaghetti carbonara:
- Cook the kale
- Fry the sausages
- Heat up the palmini linguini in the microwave
- Whisk together the carbonara ‘sauce’: eggs, cheese, parsley and seasonings
- Toss it all together in a skillet with a bit of water
A super easy, filling pasta dinner in under 10 minutes; And that too Low Carb, Keto and Gluten Free!
Seems unrealistic doesn’t it?!
Low-Carb Palmini Carbonara with Kale and Sausages
Ingredients
- 1 packet Palmini Pasta – Linguine (about 200g)
Kale & Sausages:
- 1 cup Kale, Shredded/Chopped, 67g
- 1 tsp Butter
- 1 tsp Garlic, Minced
- 2 links Chicken Sausages, Precooked
Sauce:
- 2 Eggs
- ¼ cup Shredded Mozzarella, 28g
- 2 tsp Parsley, Chopped
- ¼ tsp Black Pepper
- ¼ tsp Garlic Powder
- ¼ tsp Italian Seasoning
Instructions
- Drain Palmini and rinse thoroughly with cold water.
- Fill skillet with 1 inch of water and bring to a simmer. Add kale and cook, stirring, until bright green, soft, and wilted, for about 2 min. Drain excess water.
- Add butter and garlic, and toss for 30 seconds. Set aside.
- Slice sausage into coins of about ⅛” thick.
- Add 2-3 Tbsp water and sausages to skillet, and fry about a minute each side. Set aside.
- In a small bowl, whisk the egg, spices, and cheese.
- Heat Palmini in microwave on high for about 1½ minute.
- Reduce heat to low, add 1-2 Tbsp water, palmini, kale and sausages and toss.
- Add egg-cheese mixture and toss quickly with tongs to coat the pasta and prevent egg from scrambling. The egg will cook if the pasta is still hot.
- Season with salt if desired, top with more shredded mozzarella, and serve.
