Rise and shine with this Overnight Peanut Butter Cup Chia-Quinoa Parfait. Layers of chocolate chia pudding, peanut butter sauce and sweetened quinoa come together to form a deliciously nutritious and filling breakfast!
Jump to RecipeI’ve been having a Peanut Butter phase lately, so was just another way to feed my obsession.
Well it started off with wanting to check that chocolate chia pudding recipe off my list, but then Peanut Butter happened! (No complaints here)
So I decided to go for a chocolate peanut butter dessert.
And on top of that, Ancient Harvest sent me a batch of their Organic Quinoa to try out.
Things just lined up too well for me to not put this together.
Layers:
- Chocolate Chia Pudding that you make overnight. You can also just switch it to PB to make it a peanut butter chia pudding.
- Peanut butter sauce made by combining PB, sweetener and water. You add this on the next day.
- Sweet quinoa: Stir together sweetener and quinoa and place it on top.
A superb combination, but also a complete meal with healthy fats, protein AND carbs!
This parfait is also clearly a super easy make ahead breakfast. It keeps well, so meal prep is also an option here!
Overnight Peanut Butter Cup Chia-Quinoa Parfait
Ingredients
- 2 Tbsp Chia Seeds, 28g
- ⅔ cup Almond Milk
- 1 Tbsp Unsweetened Cocoa Powder
- ½ tsp Vanilla Extract
- ¼ tsp Cinnamon
- Stevia Sweetener, 4 tsp sugar worth (Use your brand's Conversion Chart)
- 2 Tbsp Peanut Butter, Creamy, 32g
- 2 tsp Water
- ½ cup Quinoa, Cooked, 92g
Instructions
- In a medium bowl, add chia seeds, almond milk, cocoa, vanilla, cinnamon and 1 packet sweetener. Whisk to combine.
- Cover and place in a refrigerator for at least 4 hours. Will be thickest after 8-10 hours.
- In a small bowl, combine peanut butter, water and 1 packet sweetener and stir.
- Sprinkle 1 packet sweetener on quinoa and mix.
- Transfer chia pudding to a jar, add peanut butter sauce and smoothen to form a layer. Place quinoa on top.
- Serve chilled topped with sliced bananas, crushed peanuts and more chocolate!
