Stop settling for sub-par snacks and make a batch of these Peanut Butter Brownie Energy Bites. They taste like no-bake brownies, so you can get your sugar-fix with some protein, fiber and healthy fats too.
Jump to RecipeEnergy Bites aka Energy Balls are all the buzz nowadays, especially in the healthy-snacking space. What they are is a combination of nutrient-dense ingredients stirred together and rolled into the shape of little balls.
They’re typically made of oats and a superfood like flax, chia or hemp and held together by some gooey binding ingredient like nut butter, dates, honey or maple syrup. And the rest of it is just whatever mix-ins one might add to get the desired flavor.
I chose to go for a Peanut Butter Brownie, so I used PB, Cocoa and some Chocolate Chips too. To keep this sugar-free, I dropped the usual sticky sweeteners and used packets of stevia instead. They were a drier than the usual, so that chill time is quite important.
Other than that, these little munchkins are quick and easy to make, and freeze well too.
Double or triple the recipe and you’ll be prepared with an on-the-go snack for a while!
Peanut Butter Chocolate Chip Brownie Energy Bites
Ingredients
- ½ cup Rolled Oats, 50g
- ¼ cup Peanut Butter, Creamy, 64g
- 2 Tbsp Flax Seeds, Ground, 20g
- 1½ tsp Unsweetened Cocoa
- Stevia Sweetener, 1½ Tbsp sugar worth (Use your brand's Conversion Chart)
- ¼ tsp Vanilla Extract
- 1 Tbsp Chocolate Chips, Stevia Sweetened, 14g
Instructions
- Add all ingredients in a bowl and stir to combine.
- Place bowl in fridge for 30 minutes to chill (so that its easier to roll).
- Scoop out a heaping tablespoon of mixture at a time and roll into balls using the palm of your hands.
- Store in the fridge or freeze in a sealed container until ready to eat!

- Freezer: 3 months in a freezer-safe resealable zipper bag.
