Jump to RecipeI love pancakes, and if someone asked me whether I’m a pancake person or a waffle person, I’d totally pick that giant stack. But for some reason I was having this phase where I really didn’t want to have pancakes.
I think it came from ending up with flat flapjacks on two consecutive days using this pancake mix. I was quite disappointed, so I decided to give waffles a shot. The packaging said this mix could be used for both, so I took the shortcut instead of making them from scratch.
But why have plain waffles when you have some chocolate in your life? Dark Chocolate waffles made that meal sound A LOT more appealing!
Topped them with sliced bananas, walnuts and a quick chocolate sauce for a super special treat!
Save this one if you need some extra chocolate this weekend.
They also freeze really well, so you can bulk-cook and have them whenever you get a chocolate craving – which might just be every day if you’re anything like me.
Rich Dark Chocolate Waffles with Pancake Mix
Ingredients
- 1 cup Pancake Mix
- 3 Tbsp Unsweetened Cocoa
- Stevia Sweetener, 1 Tbsp sugar worth (Use your brand's Conversion Chart)
- 1 cup Water or Milk
- Eggs, if required for pancake mix recipe
- 1 Tbsp Coconut Oil, or other
Toppings:
- Walnuts
- Sliced Bananas
- Chocolate Drizzle, 1 Tbsp Butter + 1 tsp Cocoa Powder + 1 tsp sugar worth Stevia Sweetener (Use your brand's Conversion Chart)
Instructions
- Preheat and lightly grease waffle iron.
- Combine and uniformly mix dry ingredients in a small bowl.
- In a large bowl whisk together wet ingredients.
- Add dry ingredients to wet, pressing along the side of the bowl to remove large clumps. Don’t over-mix, small clumps are expected.
- Pour batter into prepared waffle iron.
- Cook for about 3-4 minutes or according to manufacturer instructions.
- Remove from waffle from iron and repeat with remaining batter.
- Load with toppings and serve!

- Makes about 2½ medium round waffles.
