- Definitely no passing craze. Frittatas are an all-time favorite meal. Been around for ages, and so customizable that you can move on to a new combination of fillings if you get tired of one.
- No worries with making this at all. All it takes is whisking together some ingredients in eggs (or egg whites here), pouring that over a hot greased pan, and just letting it sit there and cook. Difficulty level: -1

Spaghetti Squash Egg White Frittata is a delicious, low calorie, high protein dish made on a stovetop. A super easy and egg-stra special meal to get you through the day.
Ingredients
- 1 cup Spaghetti Squash, Cooked and Shredded, 155g
- ½ tsp Olive Oil, Divided
- ¼ cup Onion, Chopped, 40g
- ¼ cup Asparagus, Chopped, 45g
- 4 Egg Whites, from Large
- ½ cup Baby Spinach Leaves, 15g
- 1 tsp Italian Seasoning, or Oregano
- Salt & Pepper to taste
Instructions
- Heat ¼ tsp oil on a non-stick pan over medium and sauté onions for about 3 minutes. Set aside
- Place asparagus in a bowl, cover with a damp paper towel and microwave for 1 minute.
- In a large bowl, whisk together egg whites, seasoning and all vegetables.
- Reduce heat to medium-low, heat remaining oil and pour egg mixture.
- Cover and cook on for about 10 minutes or until eggs are done.
- Slice and plate!
Notes
To cook the squash
- Preheat oven to 350°F.
- Wash and cut the squash in half along the length, and scoop out the seeds.
- Bake for 30 minutes, cut-side down on a parchment-lined baking sheet, until flesh is tender.
- Cool for about 5 minutes when done, then shred the flesh with a fork and set aside.
