Well my intial idea was to make brownies made of banana, but I’ve been seeing so many of these 2-layer (or even 3) later treats everywhere, that I wanted to make my own!
Somehow inspiration struck and I decided to make this beautiful layered dessert.
And because banana bread + brownies wasn’t “fancy” enough, I decided to take it 2 steps further and made this treat Vegan, Paleo and loaded with Chia Seeds for a dose of fiber, protein and Omega-3s!

How to make this super easy Vegan & Paleo Banana Bread + Brownie
Sounds fancy, but this dessert-for-breakfast is really simple to put together.
All it takes is making the banana bread layer, pouring it into the pan, making the brownie later, pouring it over the banana bread later, and then baking it.
An easy, Vegan and Paleo Banana Bread:
- Make the chia egg: Stir chia seeds and water and let rest 5 minutes
- Whisk the wets: 2 bananas, chia egg, almond butter, applesauce and vanilla
- Mix the dry: Almond flour, coconut flour, baking powder and cinnamon
- Combine wet + dry and fold together
A decadent Vegan and Paleo Brownie without melted chocolate chips:
- Make the chia egg: Stir chia seeds and water and let rest 5 minutes
- Whisk the wets: Almond milk, coconut oil and chia egg
- Mix the dry: Almond flour, coconut flour, cocoa or cacao powder, baking powder and sweetener
- Combine wet + dry and fold together
The best healthy Banana Bread Brownie
- Pour the banana bread layer into a parchement lined baking sheet and smoothen
- Pour the brownie layer over the banana layer and smoothen
- Bake for about 35 minutes at 350°F and cool
- Slice and devour!
Vegan, Paleo & Gluten-free
Yes yes and yes! Both the banana bread and the brownies are made with coconut flour and almond flour, and have no flour, no butter, no eggs (no flax egg either), so are gluten-free, paleo-friendly as well as Vegan.
There’s also no milk in here – just almond milk – so its completely dairy free!
Unlike most banana bread brownies out there, this recipe has no sour cream either.
Sugar-free
The best part about making a homemade banana bread – and brownie for that matter – is that along with control the vegan- and paleo- part, you can also make it extra healthy with no added sugar.
This banana bread part of this has no sweetener added at all, since the banana and applesauce add the sweetness it needs.
As for the brownie, its made with unsweetened cocoa powder – or cacao powder – and no chocolate chips (which usually have sugar in there) – so you do need to add some sweetness. A natural sugar-free solution? Stevia!

Ultimate 2-in-1 Banana Bread Brownies (Vegan & Paleo)
Ingredients
Banana Bread:
- 1 Tbsp Chia Seeds, 14g
- 2½ Tbsp Water
- 2 medium Bananas, 1 cup Mashed, 240g
- 2 Tbsp Almond Butter, Creamy, Or other, 32g
- 2 Tbsp Applesauce
- ½ tsp Vanilla Extract
- ¼ cup + 2 Tbsp Almond Flour, about 30g
- 2 Tbsp Coconut Flour, about 14g
- 1 tsp Baking Powder
- ½ tsp Cinnamon
Brownie:
- 1 Tbsp Chia Seeds, 14g
- 2½ Tbsp Water
- ½ cup Almond Milk, or other
- 2 Tbsp Coconut Oil, Melted
- 1 tsp Vanilla Extract
- ⅔ cup Almond Flour
- 2 Tbsp Coconut Flour
- ¼ cup Cacao Powder, or Unsweetened Cocoa
- 1 tsp Baking Powder
- Stevia Sweetener, ⅓ cup sugar worth (Use your brand’s Conversion Chart)
Instructions
- Preheat oven to 350°F and line a 8×8” baking pan with parchment paper.
Banana Bread Batter:
- Make chia egg: Combine chia seeds and water in a small bowl and set aside for 5 min.
- In a large bowl, roughly mash banana with a fork.
- Add chia egg, almond butter, applesauce and vanilla extract, and blend with a hand mixer on low till pureed, 20 seconds.
- In a small bowl, combine and uniformly mix almond flour, coconut flour, chia seeds, baking powder and cinnamon.
- Add dry ingredients to wet, and fold with a spatula until combined.
Brownie Batter:
- Make chia egg: Combine chia seeds and water in a small bowl and set aside for 5 min.
- In a large bowl, whisk together almond milk, coconut oil and chia egg.
- In a small bowl, combine and uniformly mix almond flour, coconut flour, cocoa powder, baking powder and sweetener.
- Add dry mix to wet and fold with a spatula until combined.
Bake and cool:
- Pour banana bread batter into baking pan and smoothen out the top with the back of spoon or spatula.
- Pour brownie batter over banana bread and smoothen out again.Top with some chocolate chips and chopped bananas if you'd like.
- Bake for about 35 minutes or until a tester inserted into center comes out mostly dry.
- Allow to cool completely and then slice.
Notes
- Chia can be replaced with flax meal.
