Chocolate Coffee Protein Donuts with an Almond Butter Glaze that taste like a baked mocha dessert! Made with protein powder, egg whites and greek yogurt, and an added caffeine boost, these might just be the best high protein low fat donuts out there!

Such a light texture, soft, fluffy, and basically everything you expect from a donut!
Don’t be surprised if all my baked doughnuts (:D) that come from now on have protein powder (chocolate or vanilla) in them – really drops the calories, carbs and sugar that would be needed in there!
It took me a second attempt to get these chocolate coffee flavored donuts one right because the first one turned out a but dry (protein powder eats up a lot of the moisture guys). But after the perfection in round 2, this might just be my go-to base donut recipe.
Ingredients For Double Chocolate Coffee Protein Donuts
I call them double chocolate coffee protein donuts because they’re made with chocolate protein powder as well as cacao or cocoa powder!
They also have a light airy texture, so are kind of like chocolate cake donuts too!
- Whole Wheat Pastry Flour – or a regular all purpose flour
- Chocolate Protein Powder – This adds in sweetness, so together with the natural sweetness from the applesauce and stevia sweetener, these chocolate donuts have no added sugar and are completely sugar free. I used Quest Nurition Chocolate Protein Powder for this donut recipe since it’s whey-casein and bakes well.
- Cacao Powder or Unsweetened Cocoa – My fave is the cacao from Kiva, since it’s organic and clean!
- Instant coffee (Decaf is okay)
- Stevia Sweetener
- Baking Powder
- Unsweetened Applesauce – Replaces the fat that’s in most donut recipes.
- Egg Whites
- Non-fat Greek Yogurt
And for the Tahini Glaze on these Mocha Protein Donuts
- Some drippy Tahini
- Whey Caesin Vanilla Protein Powder; I used the one from Quest Nutrition.
Alternatives for Healthy Chocolate Protein Powder Donuts with Instant Coffee
I made these healthy, low calorie and low fat baked chocolate coffee donuts with this particular ingredient list, but here’s some options to try:
- Whole Wheat Pastry Flour: 1:1 Gluten Free Baking Flour or All purpose flour in the same amount by weight not cups.
- Chocolate Protein Powder: Use a Vanilla
- Applesauce: Mashed Banana or Pumpkin Puree
- Greek Yogurt: Coconut Yogurt
- Tahini: Almond Butter, Hazelnut Butter, Peanut Butter, Cashew Butter
Vegan Mocha Protein Donuts
To make these chocolate coffee protein donuts Vegan, use aquafabla (chickpea liquid) and coconut yogurt instead of the egg whites and greek yogurt.
Also make sure you use a plant based protein powder for these baked mocha donuts.
Some Tips For Baking Donuts with Chocolate Protein Powder:
- Make sure your mixture has enough moisture in it. Protein powder is quite absorbent and if the wet ingredients are too little, the donuts will be dry! The mix should be like a slightly thick brownie batter.
- Use your brand’s conversion chart for the stevia to get the right sugar equivalent. Not all sweeteners are the same. Some are also a blend of stevia and erythritol so the conversion for those would be a lot different.
- If using regular sugar instead of stevis, add more moisture to make sure the mix is not too thick or dry.
- Use room temperature egg whites and yogurt so they mix well with the dry ingredients.
- Be sure to grease the donut pan if it isn’t silicon.
- Let the donuts cool completely before spreading the glaze on them.
Do I Need A Donut Pan To Make Baked Protein Powder Donuts?
If you have a silicon or metal metal donut pan use it, – be sure to grease the metal one.
But no donut pan? Use a muffin tin!

How to store Gluten Free Glazed Chocolate Protein Doughnuts?
These homemade chocolate protein doughnuts keep really well in the fridge, freezer, or even at room temperature.
About 5 days in the fridge in an airtight container.
Store them at room temperature, for 1-2 days in an airtight container again.
Another option is to place the donuts in freezer-safe zipper bags and freeze for up to 2 months.

Amazing Chocolate Coffee Protein Donuts (Baked)
Ingredients
- ¼ cup Gluten-free All Purpose Flour, or regular, 30g
- 1 scoop Chocolate Protein Powder, Whey-Caesin, 30g, about ⅓ cup
- 3 Tbsp Cacao or Unsweetened Cocoa Powder
- 1 Tbsp Instant Coffee
- 1 tsp Baking Powder
- Stevia Sweetener, 2 Tbsp sugar worth (Use your brand’s Conversion Chart)
- ½ cup Unsweetened Applesauce, 120g
- 3 Egg Whites, about ¼ cup + 2 Tbsp, about 92g
- 2 Tbsp Non-fat Greek Yogurt, about 28g
Almond Butter Glaze:
- 1 Tbsp Tahini, 16g, see post for subs
- ½ Tbsp Vanilla Protein Powder, Whey-caesin, 3g
Instructions
- Preheat oven to 350°F and spray a donut pan with cooking spray to grease.
- In a large bowl, whisk together flour, protein powder, cacao or cocoa powder, instant coffee, baking powder and sweetener.
- Add in applesauce, egg whites and yogurt and mix with a large spoon until just combined.Mixture will be runny.
- Divide mixture evenly among donut pan cavities, filling about ⅔-¾ way up.
- Bake for 15-16 minutes or until a toothpick inserted into the donut comes out clean.
- Let cool for 5 minutes and remove from pan. Transfer to a cooling rack to cool.
Glaze:
- In a bowl, stir together tahini and protein powder.
- Use the back of a spoon, a knife or your fingertips to spread glaze on top of donuts!

So I made these today 🙌🏼 I just realized I needed a donut pan and didn’t read your tips on how to use a muffin pan to make donuts until after I had already poured the batter 🤦🏻♀️ so we had muffins. They came out super moist and yummy still. For the glaze I used almond butter because my son is allergic to sesame. It was a little thick so I had to use some almond milk to make it softer. They are DELISH and my 7 and 5 yo devoured them!! 👌🏼👌🏼👌🏼❤️❤️❤️ Your recipes are GENIUS!!

How does this recipe not have any reviews? What the heck! It’s pure genius! I made these donuts and the original recipe from Mason Fit. This one beats it hands down. These donuts are actually chewy and moist. I used a whey/casein blend (PEscience). I also didn’t have any yogurt so I just blended some low fat cottage cheese. This is my new protein donut recipe and I know a thing or two about cooking; I was a chef.

That texture and moist-ness was exactly what I was going for, so that second attempt was definitely worth it. Whey/Caesin blends really do work best for baking don’t they?!
And thanks for the pointer on the cottage cheese, I’m going to keep that in mind if I’m ever out of yogurt.
