This was actually my first concern with any dessert recipe that uses chickpeas – does it taste like the actual canned garbanzo beans.
But with all peanut butter flavor and protein powder for sweetness, this is like eating normal protein cookie dough!
And being such a low calorie cookie dough, I think the actual serving size should be about 1 cup at a time instead of ¼ cup!
Ingredients for this Chickpea Protein Cookie Dough
I know the chickpea cookie dough concept isn’t new, but this one is, because it uses peanut butter powder and protein powder instead of normal peanut butter and a ton of liquid sweetener.
This is the key to making it a low fat and high protein cookie dough!
The rest of the ingredients are pretty simple too;
- Chickpeas – You can use the canned chickpeas or cook some from dried garbanzo beans.
- Peanut Butter Powder , also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Vanilla Protein Powder to make this edible cookie dough high protein and also replace some of the sweetener. I use Quest vanilla protein powder for this recipe; It’s sweetened with stevia and makes the recipe sugar free too!
- A bit of Coconut Flour
- Maple Syrup the Sugar-free from Lakanto again (same discount code here)
- Unsweetened Almond Milk or another non dairy or regular milk
- Water
- Chocolate Chips – I use sugar free ones from Lakanto here too. Lily’s is another sugar-free option!
If your protein powder is not sweet enough, you might need some more maple syrup, or use stevia sweetener instead.
Vegan and Dairy Free
Use a plant based protein powder to get a Vegan chickpea protein cookie dough; The recipe is already dairy free since it uses almond milk and no actual milk.
Gluten Free
Since it’s made with Coconut Flour, this raw cookie dough is also gluten free!
How to make Protein Powder Chickpea Cookie Dough
Raw protein cookie dough is super easy to make – all you need is a food processor, bowl and spoon!
- Process the chickpeas in the food processor until it gets slightly broken down.
- Add in everything else (except coconut flour and chocolate chips): peanut butter powder, protein powder, water, almond milk and maple syrup, and process again.
You should have a smooth mixture. - Transfer the mix to a bowl and fold in the coconut flour and chocolate chips.
To make edible chickpea cookie dough without a food processor
You can make raw protein chickpea cookie dough in a blender with the ‘pulse’ setting. If possible, even lower the power so that you don’t end up with a liquid consistency.
Tips for the best Protein Cookie Dough Recipe
- Take off the skin from the chickpeas – it makes the dough a lot creamier like a dip.
- Use room-temperature milk
- Use Mini chocolate chips so they won’t take over the texture of the cookie dough
- Add the coconut flour at the end along with the chocolate chips – this way you can avoid the risk of it turning into paste too.
How to serve Peanut Butter Powder Cookie Dough
Since it’s made with chickpeas, peanut butter powder and protein powder, this low calorie cookie dough is perfect to amp up any other dessert you have!
Have it straight out of the bowl
Use it as a topping for Ice Cream
Or maybe a yogurt bowl!
Add some extra coconut flour and roll it into protein balls
Or even press it into protein bars!
To store Edible Protein Cookie Dough
Raw cookie dough with chickpeas needs to be stored in the fridge or freezer. Place it in an airtight container and it should last 5 days in the fridge and up to 3 months in the freezer.
For the freezer option, I would recommend portioning out the dough into individual portion sizes and placing them in airtight containers or freezer-safe zipper bags.
Thaw them overnight before you dig in. If the mix is too hard, stir in some more almond milk.
Alternative ingredients for Healthy Cookie Dough:
- Make White Bean cookie dough using dry or canned Cannellini Beans instead of the chickpeas
- Regular peanut butter instead of peanut butter powder (but with no water, and less milk)
- Almond Butter or Cashew Butter are good allergen friendly options in place of peanut butter.
- To switch out the coconut flour, try using about ⅓ cup of Almond Flour. I haven’t trued this myself though.
- Honey in place of the maple syrup, but this won’t be sugar-free or Vegan anymore.

Protein Chickpea Cookie Dough (Low Calorie & Sugar Free)
Ingredients
- 1½ cup Chickpeas, Drained can (390g) or Cooked from dry (110g)
- 6 Tbsp Peanut Butter Powder, 48g, see notes for sub
- ¼ cup Vanilla Protein Powder, 22g
- 3 Tbsp Water
- 2 Tbsp Almond Milk
- 2 Tbsp Maple Syrup, Sugar free recommended
- 3 Tbsp Coconut Flour
- ¼ cup Mini Chocolate Chips, Sugar free recommended, 56g
Instructions
- Place chickpeas in a food processor or blender, process until roughly broken down.
- Add remaining ingredients except coconut flour and chocolate chips – chickpeas, peanut butter powder, vanilla protein powder, water, almond milk and maple syrup.
- Pulse until smooth, about 1 minute. Add more milk to thin if needed.
- Transfer to a bowl, add coconut flour and chocolate chips; Fold to combine.
Notes
- To replace peanut butter powder: use creamy peanut butter, avoid the water and start with only 1 Tbsp almond milk.
