That list just started getting overwhelming though so I went for the easiest and quickest recipe I could think of.

Ingredients for Protein Cookie Butter Balls
These easy no bake cookie buter truffles need just 3 ingredients and should definitely be on to of your biscoff cookie butter recipes list!
- Cookie Butter! I use my homemade low-fat cookie butter recipe here, but you can also use the regular Biscoff butter spread or Speculoos cookie butter too.
- Vanilla Protein Powder to make high protein truffles as well as replace the sweetener. I use Quest vanilla protein powder for this recipe; It’s sweetened with stevia and makes these cookie butter protein balls sugar free too!
if you want to admit the protein powder. you can use any other sweetener. For a sugar free one-on-one sweetener I recommend Lakanto (code HAYLSKITCHEN gets you a discount).
- Almond Flour so these healthy cookie dough bites are actually low carb and keto.
And then if you want the optional chocolate drizzle (but really is it optional?)
- White Chocolate Chips! For a sugar free option I use Lily’s white chocolate chips. Another good one for regular chocolate is Lakanto (the same discount code applies here too)
To make Cookie Butter Protein Balls Keto
The key to making keto cookie butter bliss balls is to use your own homemade cookie butter spread using low carb cookies.
Another thing you want to make sure of is to use a sugar-free or stevia sweetened protein powder that’s actually Keto!
For Vegan Cookie Butter Energy Bites
You can easily make these cookie butter balls Vegan as well; Make your own cookie butter with Vegan cookies (so there’s no eggs or milk or cream), use a plant-based protein powder and dairy-free chocolate chips.
How to make High Protein Cookie Butter Balls
The best part about these three ingredient no bake protein energy balls is that they’re super easy to make!
- Combine the cookie butter, vanilla protein powder and almond flour in a bowl and mix it until it’s all uniform
- Spoon out some of the mixture, about a tablespoon worth, and roll it using your (clean) hands.
And that really is all of it!
Make the White Chocolate Drizzle:
I would not recommend melting white chocolate in the microwave because it burns very easily. Instead of that make your own makeshift double boiler!
- Place boiling water in a large bowl
- Now place the chocolate chips and coconut oil a separate bowl and place that bowl over the water.
Don’t let the water spill over into the chocolate; You might need to hold the bowl with one hand. - Stir the chocolate until it’s completely melted. Let it cool a bit.
- Place the balls on a plate or cookie sheet.
- Use a spoon and drizzle the chocolate on the balls.
- Keep the plate in the freezer of fridge to let the chocolate harden.
How to store Biscoff Truffles
These biscoff cookie balls or truffles are best stored in the fridge or freezer.
Keep the cookie butter bites in an airtight container in the fridge for up to 1 week.
For the freezer friendly option, place the balls in an airtight sealed container and they should be good for 2-3 months. Let them thaw on the counter before eating!
Tips for Biscoff Cookie Balls
- Make sure that your cookie butter is sweet enough or you might need extra protein powder.
- The mixture should be soft but not too wet. Add more almond flour or protein powder if the mixture keeps sticking to your hand.
- If it’s too hard to handle place the cookie butter ball mixture in the freezer to harden for a little time.
Alternate ingredients for Cookie Butter Energy Balls
- I haven’t tried this myself but another nut butter spread with a sweetened cookie flavor (maybe) would likely work in these cookie butter energy bites.
- To make cookie butter protein balls with oats, use oat flour instead of almond flour.
- For a nut-free option, use cashew flour instead of the almond flour.

High Protein Cookie Butter Balls – Easy and 3 Ingredients!
Ingredients
- ½ cup Cookie Butter, 128g, homemade recipe below
- ¼ cup Almond Flour, 20g
- 1 Tbsp Vanilla Protein Powder, 5-6g
Chocolate Drizzle:
- 1 Tbsp Chocolate Chips, Sugar free recommended, 14g
Instructions
- Combine cookie butter, almond flour and vanilla protein powder in a large bowl and mix; The mixture will be soft.
- Add more almond flour if too wet.
- Spoon out about a tablespoon of mixture at a time roll into balls using clean hands. You should have 8.
For chocolate drizzle:
- Melt chocolate chips in a bowl using a double boiler – pour boiling water into a large bowl, place chocolate chips in separate bowl and place it on top of water (Do not let water overflow into bowl – hold with hands if needed). Stir chocolate chips until melted.
- Let cool a little, place truffles on plate or parchment lined sheet and drizzle chocolate on top.
- Place in fridge or freezer to harden.
