Jump to RecipeI just got my hands on a new pack of matcha and that color was so bright and vibrant green that I had to make something that would give it a good contrast. Matcha and chocolate with the green and brown seemed like a good idea, and these raw matcha brownies concept came to be.
Added in the protein powder for sweetness because I wanted to make this a healthy matcha snack recipe. And voila! Protein matcha brownie bars!
Does matcha taste good with chocolate?
Before trying this combination I was quite uncertain about this, but yes, matcha definitely tastes really good with chocolate! The earthy flavor of match powder goes quite well with the rich chocolate flavor; In these matcha protein bites and otherwise too.
Ingredients for Matcha Brownie Protein Bites
These matcha brownie protein bars are made with extremely basic ingredients you can find in your pantry, and are all gluten free, sugar free, dairy free and Vegan too!
- Oat Flour
- Coconut Flour
- A bit of Almond Milk
- Extra Sweetener like monkfruit or stevia; This depends on how sweet your protein powder is.
The Matcha Oat Layer
- Vanilla Protein Powder for high protein matcha energy bars, and also replace the sweetener. I use the whey-casein from Quest Nutrition.
- Matcha Green Tea Powder
The No Bake Brownie Layer
- Whey Casein Chocolate Protein Powder from Quest Nutrition again, and Whey Chocolate Potein Powder, from Dymatize.
- Just Unsweetened Cocoa
- Unsweetened Applesauce
And a Sugar-free Chocolate Drizzle!
- Sugar free Chocolate Bar or Chocolate Chips to make this a matcha brownie bar with no added sugar. I use the ones from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Bar or Chocolate Chips.
- Coconut Oil so the chocolate is easier to melt and more smooth when you drizzle.
Tips for making Chocolate Matcha Protein Bars
These high protein matcha chocolate bars are extremely easy to make, with just making one layer at a time.
- Line the muffin pan or loaf pan with parchment paper.
- Add milk little at a time so that the mixture doesn’t get too runny.
Use more milk if too dry, more coconut flour if too wet. - Taste the mixture; If you need it sweeter (this would depend on the sweetness of your protein powder), add a bit of stevia or monkfruit sweetener.
- Melt the chocolate in intervals (stirring every now and then) until it’s completely melted – this prevents it from burning.
To store Matcha Brownie Protein Bites
These homemade matcha protein bites need to be stored in the fridge since they have milk in there.
To store, place raw matcha brownies in an airtight container in the fridge for up to a 1 week.
To freeze, place matcha bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!

I made these sugar free, gluten free and vegan matcha protein bars this particular ingredient list, but here’s some healthy alternatives you can try.
- Oat Flour: Use Almond Flour; It makes a low carb, paleo and gluten free recipe
- Unflavored Protein Powder: More Oat flour or Almond Flour
- Whey vs Whey Casein Protein Powder: You can use either, but reduce milk if using all whey.
Use Plant Based protein powder to make them vegan. - Almond Milk: Regular milk or other non dairy milk

No Bake Matcha Brownie Protein Bites (Vegan, Gluten Free)
Ingredients
Brownie Layer:
- ⅓ cup Oat Flour, 30g
- ¼ cup Coconut Flour, 28g
- ¼ cup Chocolate Protein Powder, Whey-Casein, 22g
- ¼ cup Chocolate Protein Powder, Whey, 22g
- ¼ cup Unsweetened Cocoa Powder, 20g
- 2 Tbsp Unsweetened Applesauce, 30g
- ¼ cup + 2 Tbsp Unsweetened Almond Milk, 90ml
- Optional Stevia or Monkfruit Sweetener
Matcha Layer:
- ⅓ cup Oat Flour, 30g
- ¼ cup Coconut Flour, 28g
- ¼ cup Vanilla Protein Powder, Whey-casein22g
- ½ scoop Unflavored Protein Powder, Whey-casein, 15g
- 1 Tbsp Matcha Powder
- ¼ cup Almond Milk, 60ml
- Optional Stevia or Monkfruit Sweetener
Chocolate Topping:
- ½ Tbsp Chocolate Chips or Chopped Chocolate, Sugar-free recommended, 7g
- ⅛ tsp Coconut Oil
Instructions
- Line a muffin pan with cupcake liners (or use loaf pan and cut into pieces later).
Brownie Layer:
- In a bowl combine oat flour, coconut flour, chocolate protein powders and cocoa powder.Add applesauce and almond milk (little at a time) and mix to make smooth dough.
- Add more milk if mix is too dry.TASTE THE BATTER and add more sweetener (stevia or monkfruit) if needed.
- Divide into 9 portions (reserve some for topping) and press down into muffin cups (or pan). Smoothen tops with back of spoon or spatula.
Matcha Layer:
- In a bowl combine oat flour, coconut flour, vanilla protein powder and matcha green tea powder.Add in almond milk and mix. Mixture should be thick.
- Add more milk if mix is too dry.TASTE THE BATTER and add more sweetener (stevia or monkfruit) if needed.
- Divide into 9 parts, and press down above brownie later.Spread extra crumbles of brownie mixture on top.
- Remove from muffin cups (or from pan and cut into 9 pieces).
Chocolate topping:
- Place chopped chocolate or chocolate chips and optional coconut oil in a large bowl and microwave about 20-30 seconds, stirring halfway, until completely melted.Allow to cool to slightly.
- Drizzle over bites and let harden.

These are not dairy free or vegan as they use Whey and Casein, which are both dairy products. The recipe does not work as described.
Hi, you can swap out the whey casein with plant based protein powder to make it vegan.
You may as well skip the extra ingredients and eat spoonful of protein powder because it would basically be the same experience but much quicker to the point. That is to say– even after pouring in an extra quarter cup of almond milk and an addition tablespoon of applesauce so that the recipe was remotely moldable instead of just a bowl of damp powder, the flavor was something I’d rather never experience again.
The sweetness of the bar really depends on the protein powder used. The ones I used and recommended in the post above work well in this recipe. So if you used something else the outcome would taste a bit different.
