Soft and fudgy No Bake Protein Blondies with rich almond butter flavor and perfect sweetness from protein powder. With no baking involved, these protein powder blondie squares are a great quick fix healthy dessert; Sugar free, gluten free and low carb too.

My initial plan with this recipe was to make a chewy and crunchy protein bar recipe, but they ended up being fudgy protein blondie squares.
The smooth and soft caramel flavor from the almond butter gave these protein blondies the extra up too.
Quite a keeper here and my roommate agrees too!
Ingredients for No Bake Protein Blondies
- Almond Butter
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein. I use the Multi-purpose mix protein powder from Quest Nutrition.
- Vanilla Protein Powder for high protein energy balls, and also replace the sweetener.

Another option would be Quest. - Almond Flour
- Coconut Flour
- Unsweetened Almond Milk
Optionally, Chocolate Chips – I use sugar free ones from Lakanto here (HAYLSKITCHEN for a disocount here too). Lily’s is another sugar-free option!
How to make No Baking Protein Powder Blondies with Almond Butter
These no bake protein blondie squares really are extremely easy to make – a simple mix and let rest recipe.
- First prep a 7 x 5” pan or loaf pan by lining it with parchment paper.
- Combine all ingredients (except rice krispies) in a bowl: the almond butter, unflavored protein powder, vanilla protein powder, almond flour, coconut flour and milk.
- Stir until it forms a dough.
If it’s too dry, add just a teaspoon of milk, and some more coconut flour if too wet.
Chocolate Topping
Melt chocolate chips in the microwave (in a bowl of course) for about 45 seconds, stirring at intervals.
Spread melted chocolate on almond butter protein blondie layer.
Sprinkle on any toppings, drizzle on chocolate.
- Freeze about 10 minutes until slightly hardened.
- Slice into 6 bars.

To store Keto Almond Butter Protein Blondies
Keep these no baking protein powder blondies refrigerated or in the freezer so they stay fresh and last longer. They keep in the fridge for up to a 1 week.
To freeze, place almond butter protein blondies in an airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!
Alternate ingredients for Raw Protein Blondies
I made these sugar free and gluten free and keto protein blondies with this particular ingredient list, but here’s some healthy options to choose from.
- Almond Butter: Use Peanut butter for no bake peanut butter blondies! Cashew butter for a nut-free recipe works great as well.
- Unflavored protein powder: Unflavored Collagen, or even Almond flour or Oat flour
- Almond Flour: Oat Flour, but use a little less
- Coconut Flour: Try 3x the amount of almond flour (I haven’t given this a try yet, but it should work)
- Almond Milk: Regular milk or other non dairy milk

Make these protein blondies recipe Vegan by using a plant based protein powder and dairy free chocolate chips; There’s no cream, no butter and no eggs in here already 🙂

No Bake Protein Blondies – Gluten Free and Low Carb
Ingredients
- ⅓ cup Almond Butter, 85g, crunchy or smooth
- ¼ cup Vanilla Protein Powder, 22g
- ¼ cup Unflavored Protein Powder, 22g, see post for subs
- ¼ cup Almond Flour, 20g
- 2 Tbsp Coconut Flour, 14g
- 3 Tbsp Unsweetened Almond Milk, 45ml
Optional toppings:
- ½ Tbsp Chocolate Chips, Sugar free recommended
- Chopped pretzels or cereal
Instructions
- Line a 7×5” pan or 8½ x 4½” loaf pan with parchment paper; leave an overhang to lift out later.
- Mix all ingredients except chocolate chips in a bowl – almond butter, unflavored protein powder, vanilla protein powder, almond flour, coconut flour and milk.
- Add more milk if the mix is too dry or coconut flour if the mix is too wet.
- Spread in prepared pan and use spoon/spatula or fingers to smoothen.
Optional topping:
- Place the chocolate chips in a large microwave safe bowl and microwave at 30 second intervals, stirring – for about 45 seconds until completely melted.
- Sprinkle on any toppings, and drizzle on melted chocolate.
- Transfer to freezer to cool about 5-10 minutes.
- Lift layers out of pan, place on cutting board and using a sharp knife, slice into 6 bars.
