Unpacking really is a pain. But it all worked out because I had the day off work on Monday. So I used the opportunity to make this single serve cookies and cream cookie for my evening snack meal! Cookie a week remained.
Ingredients for Single Serving Cookies and Cream Protein Cookie Recipe
This healthy cookies and cream protein cookie recipe has just a few simple ingredients, is eggless, has no butter or oil and no sugar sugar either!
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Protein Powder for high protein cookie recipe, and also replace the sweetener.
I recommend Quest Vanilla or even better the Quest cookies and cream protein powder for an authentic flavor. - Unflavored Protein Powder I use the multi-purpose mix from Quest Nutrition here as well; It replaces some of the flour in this recipe.
- Cashew Butter
- Non-fat Greek Yogurt contributes to the oil-free part of these cookies and cream protein cookies since it adds the moisture, and also extra protein
- Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
- Baking Powder
- Sugar-free Oreo Sandwich Cookies or regular – I recommend the Keto friendly Chocolate Vanilla Sandwich Cookies from Catalina Crunch to make these healthy low calorie cookies and cream protein cookie.
How to you make a Single Serve Oreo Protein Cookie
To make one of these Oreo protein powder cookies, you mix the protein cookie dough, spread it out and just bake!
- Preheat your oven to 350°F and line a baking pan with parchment paper.
- Mix your ingredients – oat flour, protein powder, collagen powder, cashew butter, Greek yogurt, almond milk and baking powder – in a bowl.
- Chop up the Oreo (or chocolate vanilla sandwich cookie) into small pieces, add in most into the mixture to make a cookies and cream protein cookie batter.
- Transfer cookies and cream protein cookie dough onto the baking sheet and shape it into a big giant Oreo protein cookie for one.
Add on the remaining chopped cookie.
- Bake for 11 min; You might need a minute extra; make sure the top is dry to touch.

Tips for Single Serve Protein Cookie
- Use Creamy Cashew Butter so that it mixes well and gives you a smooth protein cookie batter.
- Make sure the milk and yogurt are at room temperature to prevent the nut butter from clumping.
- Don’t over-bake the cookie; Let cook until the top is just cooked and soft; too long and you might end up with a rough and dry texture.
Alternates for this Cookies and Cream Protein Powder Cookie Recipe
I recommend making this Oreo inspired giant protein powder cookie using the ingredients and products listed – especially the since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- Oat flour: Use Whole wheat pastry flour, all purpose flour or 1:1 Gluten-free baking flour in the same amount by weight.
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it. - Unflavored Protein Powder: 2 Tbsp more Flour, but also reduce milk to 1 Tbsp
- Cashew Butter: Almond Butter, Hazelnut Butter or any other nut/seed butter; I wouldn’t recommend peanut butter since it has a strong flavor.
- Almond Milk: Regular non-dairy milk
- Greek Yogurt: Coconut Yogurt
A Vegan Protein Cookie Recipe
This single serve cookies and cream protein powder cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too with the right alternatives.

Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Combine all the ingredients except the sandwich cookie in a bowl – oat flour, protein powder, unflavored collagen, baking powder, cashew butter, Greek yogurt and almond milk.
- Roughly chop chocolate vanilla sandwich cookie (or Oreo) and add in most of the pieces.
- Transfer cookie mixture onto baking sheet, spread with spoon and shape.Top with remaining sandwich cookie pieces.
- Bake about 11 minutes – top should be dry to touch.Let cool for a few minutes and enjoy!
