A cheesecake stuffed cookie – protein cookie – was just something I had to do after all those other giant cookies I’ve been making. And what better flavor for a protein cheesecake cookie than red velvet right? That color combination especially!

Ingredients for Cheesecake Stuffed Red Velvet Protein Cookie for One
This healthy red velvet protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar sugar either!
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Chocolate Protein Powder for high protein cookie that’s also sugar free.
I used Quest here. - Unsweetened Cocoa Powder or Cacao Powder
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Non-fat Greek Yogurt contributes to the oil-free part of these chocolate protein cookies since it adds the moisture, and also extra protein
- Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
- Baking Powder
- Red Food Coloring for that red velvet effect
For the Protein Cheesecake Cookie Filling
The filling for this red velvet cheesecake cookie has really healthy ingredients as well – no sugar and low fat stuff.
- Reduced Fat Cream Cheese for a low fat and low calorie cheesecake cookie
- Non-fat Greek Yogurt
- Vanilla Protein Powder – this makes for a sugar free protein cheesecake cookie it serves as the sweetener in place of sugar.
I used ProteinWorld Whey; The ProteinWorld Slender Blend another great option.
Quest would also be an option here too.
And optionally for the topping:
- White Chocolate for that red velvet and white chocolate combination.
I use sugar free white chocolate chips from ChocZero here; Lily’s is another good one.

How to make a Single Serve Red Velvet Protein Powder Cookie
To make one of these giant red velvet protein powder cookies, you mix the protein cookie dough, spread it out, add the filling, and just bake! A simple cheesecake stuffed cookie!
- Preheat your oven to 350°F and line a baking pan with parchment paper.
- Mix your cookie ingredients – oat flour, chocolate protein powder, cocoa powder, peanut butter powder, almond milk, Greek yogurt, food coloring and baking powder – in a bowl.
- Mix the protein cheesecake cookie filling ingredients – low fat cream cheese, Greek yogurt and vanilla protein powder – in another bowl.
- Spread ½ red velvet protein cookie dough onto the baking sheet in a round cookie shape.
- Spred the cream cheese mixture in the middle to form the cheesecake stuffed cookie.
- Cover with remaining chocolate protein cookie dough and shape it into a giant red velvet cheesecake protein cookie for one.
- Bake for 13-14 min. You might need a minute extra; make sure the top is completely dry to touch.
Let it cool a bit, and indulge!
Alternates for this Single Serving Red Velvet Cookie
I recommend making this healthy red velvet cheesecake protein cookie using the ingredients and products listed – since it gives the best results.
If you need other options for the flours and such, here’s some alternatives for a healthy red velvet cheesecake cookie:
- Oat flour: Use Whole wheat pastry flour or even all purpose flour. A 1:1 Gluten-free all purpose baking flour would work too. Go by the weight for these substitutions.
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it. - Chocolate Protein Powder: Use Vanilla Protein powder instead of chocolate, or
1:1 Zero Calorie Sugar Substitute; I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too) - Peanut Butter Powder: Use real peanut butter, but reduce almond milk to 2 tbsp
- Almond Milk: Regular non-dairy milk
- Greek Yogurt: Coconut Yogurt
A Vegan Protein Cookie Recipe
This single serving red velvet cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too.
For the perfect eggless Vegan red velvet protein cookie, make sure you use a plant based protein powder, coconut yogurt and dairy free cream cheese.

Cheesecake Stuffed Red Velvet Protein Cookie – The Best Solo Dessert
Ingredients
- ¼ cup Oat Flour, 22g, see post for subs
- 2 Tbsp Chocolate Protein Powder, about 11g
- 1 Tbsp Unsweetened Cocoa Powder, or Cacao Powder, 5g
- 1 Tbsp Peanut Butter Powder, 6g
- ¼ + ⅛ tsp Baking Powder
- 3 Tbsp Unsweetened Almond Milk
- 2 Tbsp Non-fat Plain Greek Yogurt, 28g
- 1 tsp Red Food Coloring (Liquid)
Filling:
- 1 Tbsp Reduced Fat Cream Cheese, 14g
- 2 tsp Non-fat Greek Yogurt, 10g
- 1 tsp Vanilla Protein Powder, 2g
Topping:
- 1 tsp Chopped White Chocolate or Chocolate Chips, Sugar free recommended, 5g
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Combine all the ingredients for the cookie in a bowl – oat flour, chocolate protein powder, cocoa powder, peanut butter powder, almond milk, greek yogurt, red food coloring and baking powder. Batter should be thick.
- In another bowl, stir together cream cheese, Greek yogurt and vanilla protein powder.
- Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.Spread cream cheese filling in the middle, cover with remaining cookie mixture and shape.Top with chopped chocolate or chocolate chips.
- Bake about 12-13 minutes – top should be cooked and dry to touch.
- Let cool for a few minutes and enjoy!
