Jump to RecipeOkay I’ve just been seeing way too many Biscoff recipes on Instagram lately, so I really started to feel like I was missing out here.
So here’s me hopping on the cookie butter recipes train with these healthy cookie butter protein bars.
Definitely has all the vibes you want from a Biscoff dessert recipe, but is actually high protein, sugar free just overall healthy!
Ingredients for Biscoff Protein Bars:
These biscoff protein bars are made with simple healthy ingredients, have no sugar or milk, making them the perfect gluten free, dairy free and sugar free homemade protein bar!
- Lotus Biscoff Biscuits aka Biscoff Cookies
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Coconut Flour
- Vanilla Protein Powder for high protein cookie recipe, and also replace the sweetener.
I recommend the Quest Vanilla since it’s whey-casein and bakes well. - Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein snack recipe. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
- Unsweetened Almond Milk
The Biscoff Layer
These cookie butter protein bars use a high protein and sugar free cookie butter layer made with sugar free biscoff and protein powder.
- Cookie Butter I use Cookie Butter Spread from ChocZero here, but you can also use the regular Lotus Biscoff butter spread or Speculoos cookie butter too, or even a homemade low-fat cookie butter recipe here.
- Vanilla Protein Powder for high protein biscoff spread.
I recommend the same here too Quest Nutrition Vanilla. - Unflavored Protein Powder: Quest multi-purpose protein powder here.
- Coconut Flour
And the topping for White Chocolate Caramel Bars:
Just a white chocolate topping here for these layered protein bars.
- White Chocolate Chips – I use sugar free white chocolate chips from ChocZero here for the contrast.
But another sugar free regular chocolate chip option is Lakanto (same discount here too) or Lily’s! - A bit of Coconut Oil
- More Crushed Biscoff Cookies
To store Speculoos Cookie Butter Protein Bars
To store homemade white chocolate cookie butter protein bars, place in an airtight container and keep on the counter for up to 3 days.
Keep these healthy Speculoos cookie butter bars refrigerated or in the freezer so they stay fresh and last longer. They keep in the fridge for up to a 1 week.
To freeze, place Speculoos protein bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!
Alternatives for Healthy Biscoff Oat Bars!
I made these sugar free and gluten free and low fat just overall healthy biscoff bars with homemade cookie butter and this particular ingredient list, but here’s some options to choose from.
- Oat Flour: Almond Flour
- Coconut Flour: About 4-5 Tbsp Almond Flour
- Unflavored protein powder: Unflavored Collagen, or even Almond flour or Oat flour
- White Chocolate: Use milk or dark chocolate chips – Lakanto for a sugar free option again (code HAYLSKITCHEN for the discount) – instead.
Vegan Lotus Protein Bars
Since there’s no milk in this dairy free recipe, these Lotus Biscoff oat bars can easily be made Vegan with the right ingredients.
Use a plant based protein powder to get a Vegan protein Biscoff bar. You also want to make sure you use dairy free chocolate chips to make these speculoos protein bars.

Biscoff Protein Bars – Easy, Healthy, Sugar Free!
Ingredients
Base:
- ½ scoop Vanilla Protein Powder, Whey-casein, 15g
- ½ scoop Unflavored Protein Powder, Whey-casein, 15g, see post for subs
- 2 Biscoff Cookies, Crushed, 16g
- ⅓ cup Oat Flour, 30g
- 2 Tbsp Coconut Flour, 14g
- 3 Tbsp Unsweetened Almond Milk, 45ml
Protein Biscoff:
- ¼ cup Cookie Butter Spread, 64g,Sugar-free recommendation below
- 1 Tbsp Vanilla Protein Powder, Whey-casein, 6g
- 1 Tbsp Unflavored Protein Powder, Whey-casein, 15g
- 2 Tbsp Coconut Flour, 14g
Topping:
- 1½ Tbsp White Chocolate Chips, Sugar-free recommended below, 21g
- ⅛ tsp Coconut Oil
- Crushed Biscoff Cookie
Instructions
- Line an 8×4” loaf pan with parchment paper; leave an overhang to lift out later.
Base:
- Combine dry ingredients in a bowl – crushed biscoff biscuit, vanilla protein powder, unflavored protein powder, oat flour and coconut flour.
- Add in milk – little at a time – and mix. Mixture will be like a dough.
- Transfer to prepared pan and press down.
Protein Biscoff:
- In the same bowl, stir Biscoff cookie butter, vanilla protein powder, unflavored protein powder and coconut flour to form a thick mixture.
- Spread on top of base and use back of spoon/spatula or fingers to smoothen.
Topping:
- Place chocolate chips in a bowl, add in a bit of coconut oil, and place over a bowl of boiling water. Stir until melted.
- Spread chocolate on bar and use back of spoon to smoothen.Top with crushed biscoff cookies.
- Transfer to freezer to cool about 5-10 minutes.
- Lift layers out of pan, place on cutting board and using a warmed sharp knife, slice into 8 bars.
