Jump to RecipeOkay I’m gonna be honest here, I haven’t had that original thick Levain Bakery cookie from New York. I actually really want to though; So this was my homemade Levain cookie to satisfy those cravings from everything I saw online.
I looked up the classic Levain cookie and some recipes online and turns out the best one is the chocolate chip walnut. That’s what I went for here.
A thick loaded chocolate chip and walnut protein cookie like the one from the bakery, but actually healthy and sugar free and what not.
Ingredients for Copycat Levain Bakery Protein Cookie Recipe
This healthy Levain protein cookie recipe has just a few simple ingredients, is eggless, has no butter or oil and no sugar either!
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Protein Powder for high protein cookie recipe, and also replace the sweetener.

- Non-fat Greek Yogurt contributes to the oil-free part of this levain protein cookies since it adds the moisture, and also extra protein
- Almond Milk to keep it dairy free.
- Baking Powder
If your protein powder is not sweet enough, you might need some more ‘sugar’, or use stevia sweetener instead.

How to you make a Single Serve Levain Protein Cookie
To make one of these Levain protein powder cookies, you mix the protein cookie dough, cool, spread on baking sheet and just bake!
- Preheat your oven to 0°F and line a baking pan with parchment paper.
- Mix your ingredients – oat flour, protein powder, collagen powder, peanut butter powder, zero calorie sweetener, Greek yogurt, almond milk and baking powder – in a bowl.
- Add in chopped walnuts and chocolate chips, and mix to form the homemade levain cookie dough.
- Cover bowl with plastic wrap and place in fridge for 45-60 minutes to cool.
- Transfer Levain protein cookie dough onto the baking sheet in a large cookie-shaped clump.
- Bake for 10 min; Top should be slightly golden brown

Tips for Single Serving Homemade Levain Bakery Cookie
- Make sure the milk and yogurt are at room temperature to prevent the nut butter from clumping.
- Let cookie dough cool! The dough will otherwise spread too much when baking and not give you the soft inside when done.
- Don’t over-bake the cookie; Let cook until the top is just cooked and soft; too long and you might end up with a rough and dry texture.
Alternates for a Healthy Levain Cookie Recipe
I recommend making this Levain inspired giant protein powder cookie using the ingredients and products listed – especially the since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- Oat flour: Whole wheat pastry flour, all purpose flour or 1:1 Gluten-free baking flour in the same amount by weight.
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it. - Protein Powder: More 1:1 Zero Calorie Monkfruit sweetener to keep it sugar free
- Unflavored Collagen: unflavored protein powder or more flour
- Peanut Butter Powder: Creamy Peanut Butter, but reduce the amount of milk
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though)
- Almond Milk: Regular non-dairy milk
- Greek Yogurt: Coconut Yogurt
A Vegan Protein Cookie Recipe
This single serve Levain protein powder cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too with the right alternatives.

Ingredients
- ¼ cup Oat Flour, 22g, see post for subs
- 1½ Tbsp Vanilla Protein Powder, about 8g
- 1 Tbsp Peanut Butter Powder, 6g
- ½ scoop Unflavored Collagen, 5g, see post for subs
- 1 tsp 1:1 Zero Calorie Sugar-free Sweetener, 4g
- ¼ + ⅛ Baking Powder
- 1 Tbsp Non-fat Plain Greek Yogurt, 14g
- 1 Tbsp Unsweetened Almond Milk
Mix-ins:
- 1 Tbsp Chocolate Chips, Sugar-free recommended below, 14g
- 1 Tbsp Chopped Walnuts, 8g
Instructions
- Combine all the ingredients except the mix-ins in a bowl – oat flour, protein powder, unflavored collagen, peanut butter powder, zero calorie sweetener, baking powder, Greek yogurt and almond milk.
- Add in chocolate chips and walnuts and mix.
- Cover with plastic wrap and place in fridge to chill for 45 mins-1hr.
- Preheat oven to 410°F and line a baking sheet with parchment paper.
- Transfer cookie mixture onto baking sheet into a large cookie-shaped clump.
- Bake about 10 minutes – top should be lightly golden and dry to touch.
- Let cool for a few minutes and enjoy!

Great recipe with great macros. The oat flour helps keep it moist. Even better when you freeze it. Just don’t make too big a batch or you might end up eating all of them.
