A light and moist banana bread with a perfect crumb and just the perfect banana bread flavor – but still healthy. And such high protein too! A great collagen dessert or breakfast recipe here.
Ingredients for High Protein Collagen Banana Bread
This high protein collagen banana bread is made with using collagen peptides powder instead of protein powder, sweetened with the banana and monk fruit, and uses whole wheat pastry flout too. Just an overall healthy banana bread.
- Mashed Banana from completely ripe and browned bananas
- Unflavored Collagen Peptides needed for high protein brownies. I use the one from Further Foods (HAYLSKITCHEN gives you a discount)
- Whole wheat pastry flour which gives it the light texture, bit still keeps this recipe healthy because of the whole grain from the whole wheat
- Coconut Flour
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
- Some Sugar free Maple Syrup; I use the sugar free monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount)
- Eggs
- Egg Whites
- Some Melted Butter
- Vanilla Extract
- A bit of Ground Cinnamon
- Baking Powder
And optionally for topping:
- Chopped walnuts or pecans
Can I substitute collagen for protein powder in baking?
No, collagen powder and protein powder are not interchangeable in baking, and this recipe will not turn out the same with protein powder. They both have very different textures and have recipes specifically designed for each.

Tips for the Collagen Powder Banana Bread
This high collagen powder banana bread is really easy to make, but here’s some tips for the perfect recipe:
- Use perfectly ripe bananas; These are easier to mash, and also add a lot of sweetness (so you don’t have to add as much sweetener) and you get a healthy protein banana bread without sugar
- Blend the wet mix using a hand mixer to prevent any chunks of banana in the batter.
- Don’t over-mix the wet and dry mixture or the loaf will be too dense and gummy (because of the gluten from the whole wheat flour can make a batter tough).
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar protein banana bread.
- Cover collagen protein banana loaf with foil tent after 40 mins of baking to prevent the top from browning and burning.
To Store Collagen Protein Banana Bread
Store collagen powder banana bread at room temperature for up to 2 days in an airtight container.
To store in the fridge, place protein banana bread in an airtight container and keep up to 1 week.
To freeze the healthy banana bread, cut it into slices, wrap each slice in plastic wrap, and place them in a freezer-safe zipper bag; Freeze up to 3 months.
You can also store the whole loaf itself – be sure to let it thaw before you slice.
Alternatives for Healthy Protein Banana Bread
For the perfect low fat but moist collagen protein banana bread, I would highly suggest using the ingredients I recommended; I do have some alternatives you can try:
- Whole Wheat Pastry Flour: Use All purpose flour or 1:1 Gluten Free Baking Flour, with the same amount by weight not cups.
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Sugar-free Maple Syrup: Regular maple syrup or honey, but the recipe will not be sugar-free anymore.
- Melted Butter: Melted Coconut Oil

Collagen Banana Bread – High Protein, Low Sugar, Amazing!
Ingredients
- 12 scoops Unflavored Collagen Powder, 120g
- 1 cup + 2 Tbsp Whole Wheat Pastry Flour, 135g, see post for subs
- ⅔ cup Coconut Flour, 75g
- ¼ cup Zero Calorie 1:1 Sugar Replacement, 48g
- 1 tsp Cinnamon
- 4 tsp Baking Powder
- 1½ cup Mashed Banana, 360g, from 3 medium
- 3 Tbsp Maple Syrup, Sugar free recommended below
- 2 Eggs, Room Temperature
- 2 Egg Whites, 60g
- 2 Tbsp Melted Butter, 28g
- 1 tsp Vanilla Extract
Optional Mix-ins:
- Walnuts, Pecans, Sugar-free Chocolate Chips
Instructions
- Preheat oven to 350°F and line an 8½” x 4½” loaf pan with parchment paper.
- In a medium bowl, whisk unflavored collagen powder, whole wheat flour, coconut flour, zero sugar replacement, cinnamon and baking powder.
- In a large bowl, whisk together mashed banana, maple syrup, eggs, egg whites, melted butter and vanilla extract (hand mixer recommended).
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or gluten from wheat flour will make the bread dense.
- Transfer batter to baking pan.
- Bake for 55-60 minutes, covering with a foil tent after 40 minutes.A toothpick inserted into center should come out dry.
- Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 40 minutes and cut into slices (plastic knife recommended).
