Ingredients for Chickpea Protein Skillet Cookie:
This healthy chickpea protein skillet cookie is made with just a can of garbanzo beans, protein powder and few simple ingredients to make the perfect easy high protein dessert.
- Chickpeas – You can use the canned chickpeas or cook some from dried garbanzo beans.
- Vanilla Protein Powder needed for a high protein cookie and also replaces most of the ‘sugar’.
I used half whey-caesin Vanilla protein powder from Quest Nutrition, and half the Slender Blend form ProteinWorld in these protein powder cookie recipe (code HAYLSKITCHEN gives you a discount on ProteinWorld). They have a Whey Protein Powder that’s great as well. - Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit or PB2 too.
- Creamy Peanut Butter
- Unsweetened Applesauce another contributor to the oil-free part of these chickpea cookies since it adds the moisture
- Pure Vanilla Extract
- Baking Powder
And then of course
- Chocolate Chips – I use sugar free ones from Lakanto here (HAYLSKITCHEN for a disocount here too). Lily’s is another sugar-free option!
Since there’s no flour – no oats and no oat flour either – these chickpea protein cookie skillet is completely gluten free!
Tips for this Healthy Chickpea Skillet Cookie with Protein Powder
- Peel skin off chickpeas (as much as possible); This will give you a smooth mixture.
- Pulse, then process mixture completely so everything mixes well.
- Scrape down sides of food processor to not waste any ingredients.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free protein cookie skillet.
- Let the chickpea cookie skillet cool before removing from pan, and cool completely before slicing.
How to know when chickpea protein cookies skillet is ready?
The protein cookie skillet is done when the top is completely set, dry, and fairly cracked. A tester (toothpick or thin sharp knife) should comes out clean and dry.

To store chickpea skillet cookie as a whole, place cast iron skillet in large zipper bag, seal and keep on countertop up to one day.

For a longer-term option, cut it up into pieces, optionally wrap each one in plastic wrap and keep the chickpea peanut butter protein cookie skillet in a freezer safe zipper bag. They should last a few months
Alternatives for Healthy Skillet Cookie with Chickpeas
I recommend making this healthy protein powder chickpea cookie skillet using the ingredients and products listed – especially the since it gives the best results with a low calorie number too.
If you need other options, here’s some alternatives:
- Peanut Butter Powder: 3 Tbsp Almond Butter, but reduce applesauce by 1-2 Tbsp (I haven’t tried this yet though)
- Peanut Butter: Almond Butter, Cashew Butter, Sunflower Seed Butter, Hazelnut Butter or even Tahini; Any nut or seed butter works here.
- Applesauce: Mashed Banana or Pumpkin Puree
- Chopped Chocolate: Chocolate Chips
Vegan Skillet Cookie
To make high protein Vegan chickpea skillet cookie, use a plant based protein powder; ProteinWorld has a Vegan protein blend that would work well here. There’s already no milk and no eggs in this recipe.

Chickpea Protein Skillet Cookie – Gluten Free and Vegan
Ingredients
- 1½ cup Chickpeas, Drained can (390g) or Cooked from dry (110g)
- ½ cup Unsweetened Applesauce, 120g
- ⅓ cup Vanilla Protein Powder, 30g, 1 scoop
- ¼ cup Peanut Butter Powder, 24g
- 2 Tbsp Creamy Peanut Butter, 32g
- 1 tsp Vanilla Extract, optional; if protein powder is not strong enough
- 1 tsp Baking Powder
- 3 Tbsp Chopped Chocolate or Chocolate Chips, 42g, Sugar free recommended below
Instructions
- Preheat oven to 350°F and grease an 8” oven-safe skillet.
- Rinse chickpeas, place in a food processor and blend until coarse and grainy, about 10 seconds.
- Place all ingredients (except chocolate chips) in food processor – applesauce, protein powder, peanut butter powder, peanut butter, vanilla and baking powder – and process until smooth, scraping down the sides if necessary.
- Fold in chocolate, reserving some for the top.
- Pour batter into pan/skillet and spread evenly with a spatula or back of a spoon.Top with remaining chocolate chips.
- Bake for 20-22 minutes; A toothpick inserted into the center should come out dry, and top should be cracked.
- Remove from oven and let cool.Cut into slices and enjoy!
