Healthy Nutella Protein Bars inspired by the Ferrero Rocher candy, but sugar free! These Chocolate Hazelnut Protein Bars use a sugar free chocolate nut butter spread and are sweetened with protein powder for a rich chocolate fudge flavor.
Jump to RecipeI was going for just Ferrero Rocher protein bars here with the whole layered effect, but after putting it all together, it really had more of a chocolate hazelnut fudge thing going.
Guess the rebranding to chocolate hazelnut or Nutella protein bars was needed. I didn’t go for the actual Nutella here though; Kept it healthy with a sugar free alternative.
Ingredients for Nutella Protein Bars
These Fererro Rocher candy inspired Nutella protein bars are made with sugar free and gluten free ingredients like sugar free Nutella, oat flour, and no sugar or milk; A great sugar free and Vegan homemade protein bar!
Here’s all you need:
The Chocolate Biscuit Base:
- Chocolate Protein Powder for high protein nutella bar, and also replace some of the sweetener.
I used whey-casein from Quest; Another alternative is HTLT Supps. - Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein recipe. I use the Multi-purpose mix protein powder from Quest Nutrition.
- Unsweetened Cocoa Powder
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Coconut Flour
- Plain or Honey Graham Crackers or Biscuits for the slight crunch (use gluten free if you need)
- Unsweetened Almond Milk
For the Chocolate Coating for a Ferrero Rocher Candy effect:
- Chopped Hazelnuts
- Chocolate Chips: The sugar free from Lakanto again here (same code HAYLSKITCHEN for a discount)
- A bit of Coconut Oil
Tips for perfect Chocolate Hazelnut Protein Bars
This no bakeChocolate Hazelnut protein bar recipe is really easy to make; Just mix and go, but here’s some tips to get it right.
- Use fine oat flour not oats. You won’t get a smooth protein bar in this case.
- Use whey-casein protein powder as specified; It absorbs more liquid. If you use whey, use less almond milk.
- Add milk only a little at a time or the mixture will be too runny.
- Mix the ingredients well before pressing down layers so you have a smooth texture
- Press down firm and even; You want the bars to hold well.
- Cut bars then drizzle on chocolate; Just makes it a bit pretty
To store Ferrero Rocher Protein Bars
To store high protein homemade ferrero rocher candy bars, place in the fridge for 3-4 days.
To freeze, place chocolate fudge protein bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!
Alternatives for Healthy Nutella Bars
I made these high protein sugar free protein bars with a healthy Nutella alternative and the ingredient list above, but here’s some options to choose from.
- Chocolate Protein Powder: Use a Vanilla (the flavor might be less dark here)
- Unflavored Protein Powder: Use Oat Flour or Almond Flour, but start with only ¼ cup of milk.
- Oat Flour: Almond Flour; The same amount in cups
- Coconut Flour: Try 3x the amount of almond flour (I haven’t given this a try yet, but it should work)
- Graham Crackers: Any cracker, or biscuit or maybe even crunchy cereal like Cheerios or Chex
- Sugar Free Chocolate Nut Butter Spread: Regular Nutella, or maybe even Hazelnut Butter or Plain Almond Butter or Cashew Butter
- Almond Milk: Regular milk or other non dairy milk
- Chocolate Chips: Chopped chocolate bar, or leave out if you want to
Vegan Chocolate Hazelnut Protein Bars
Since there’s no milk in this dairy free recipe, these Ferrero Rocher inspired protein candy bars can easily be made Vegan with the right ingredients.
Use a plant based protein powder to get a healthy Vegan Nutella bar. ProteinWorld has a Vegan protein blend as well.
You also want to make sure you use dairy free chocolate chips.

Nutella Protein Bars (like Sugar Free Ferrero Rocher)
Ingredients
- ½ cup Chocolate Protein Powder, Whey-casein, 45g
- ½ scoop Unflavored Protein Powder, Whey-casein, 15g, see post for subs
- ¼ cup Unsweetened Cocoa Powder, 20g
- ¼ cup Oat Flour, 22g, see post for sub
- 3 Tbsp Coconut Flour, 21g
- ½ sheet Graham Crackers/Biscuits, Crushed, 8g
- 2 Tbsp Chocolate Hazelnut Spread/Nutella, Sugar-free recommended below, 28g
- ⅓ cup + 1 Tbsp Almond Milk, 95ml
Chocolate Hazelnut Topping:
- 1 Tbsp Chopped Hazelnuts, 7g
- ½ Tbsp Chocolate Chips, Sugar-free recommended below, 7g
- ⅛ tsp Coconut Oil (few drops)
Instructions
- Line a loaf pan with parchment paper; leave an overhang to lift out later.
- In a bowl, combine chocolate protein powder, unflavored protein powder, oat flour, coconut flour, cocoa powder and crushed graham crackers.
- Add in chocolate nut butter spread and milk – little at a time – and mix to form cookie dough-like consistency.
- Transfer to prepared loaf pan, and use fingers or back of spoon/sparula to press down and spread.
- Press on Chopped hazelnuts.
- Place in freezer 5-10 minutes minutes.
- Remove from pan, place on chopping board and cut into 5 bars.
Chocolate topping:
- Place the chocolate chips and coconut oil in a shallow bowl and microwave for about 30 seconds – at 15 second intervals – until it’s completely melted. Let cool about 5 mins.
- Drizzle onto chopped bars.
