And after the red velvet one, I thought I’d go for another funky color with this green tea molten lava cake! But of course healthy and sugar free as usual with the protein powder.
Ingredients for Protein Matcha Lava Cake Recipe without White Chocolate
This protein Matcha lava cake recipe uses whole wheat pastry flour and protein powder and has no white chocolate like most others, making it quite a low calorie and healthy recipe.
Here’s everything you need for this sugar free healthy matcha lava cake:
- Whole Wheat Pastry Flour
- Vanilla Protein Powder for high protein matcha cake, and also replace some of the sweetener.

- Matcha Green Tea Powder – A good quality one here
- A bit of Greek Yogurt to add moisture since there’s no butter or oil in here
- Unsweetened Almond Milk but regular milk is okay too.
- An Egg White
- Vanilla Extract
- Baking Powder
Tips for the perfect Matcha Protein Mug Cake with a Molten Lava Center
This molten lava matcha protein mug cake is really is to make; Just mix the wet and dry separately and then together, but here’s some tips to get it tight.
- Use Whole Wheat Pastry Flour not Whole Wheat; The latter would make the cooked part of the lava cake too dense.
- Don’t over-mix the batter; The protein power or gluten from the whole grain flour will make the matcha protein cake dense and gummy.
- Grease the inside of the ramekin so the Japanese Green tea lava cake to comes out easily when cooked
- Don’t overbake the matcha protein lava cake. The top will should be just cooked. It might look soft, but will harden when it cools a bit.
- Wait for the cake to cool slightly! The hot one won’t come off the sides
- Run a knife along the side of the ramekin to loosen the healthymatcha so it comes off smoothly when you flip it on a plate.
Alternative Ingredients for Healthy Matcha Molten Lava Cake
This high protein healthy matcha molten lava cake without white chocolate really comes out perfectly with the ingredients – and brands – I recommended but here’s some more options to try.
- Whole Wheat Pastry Flour: Use all purpose flour or 1:1 Gluten Free Baking Flour in the same amount by weight (not cups).
- Egg White: Maybe 2 Tbsp aquafaba (chickpea liquid). I haven’t given this a try yet though.
- Almond Milk: Any other regular or non-dairy milk
- Greek Yogurt: Coconut Yogurt or even Cottage Cheese for a cottage cheese protein mug cake
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though)
A Vegan Protein Matcha Lava Cake
For a Vegan matcha lava recipe, make sure you use a plant based protein powder, aquafaba and coconut yogurt.

Protein Matcha Lava Cake (Simple, No White Chocolate)
Ingredients
- 3 Tbsp Whole Wheat Pastry Flour, or regular Flour, 22g
- 2 Tbsp Vanilla Protein Powder, 11g, or Vanilla
- 1 tsp Matcha Green Tea Powder
- 1 tsp Zero Calorie 1:1 Monkfruit Sugar Replacement, 4g
- ¼ tsp Baking Powder
- 1 Egg White, 31g
- 2 Tbsp Unsweetened Almond Milk, 60ml, room temperature
- 1 Tbsp Greek Yogurt, 14g
- ¼ tsp Vanilla Extract
Instructions
- Preheat oven to 350°F, and lightly grease a 1 cup (8 oz) ramekin or mug.
- In a bowl, mix flour, vanilla protein powder, matcha powder, zero calorie monkfruit sugar and baking powder.
- In an a bigger bowl whisk egg white, milk, yogurt and vanilla extract.
- Add in dry mix and stir to form a smooth batter.Do not over-mix, or the cake will be too dense.
- Transfer batter into the mug/ramekin.
- Bake for 18 minutes; Top should be mostly set, but still soft and wobbly. It will harden when cool.
- Let cool about 5 minutes, invert onto a plate and dig in!
