Jump to RecipeI’d been holding off on trying this healthy Kit Kat bar recipe for a while just because I wanted those rice cake thins.
Definitely worth the try because these bars are crunchy and taste so perfect! A really easy snack or dessert to satisfy those candy cravings.
Ingredients for Kit Kat Protein Bars:
These candy inspired Kit Kat protein bars are made with rice cakes thins and simple healthy ingredients, with no sugar or milk; A great sugar free and Vegan homemade protein bar!
- Rice Cake Thins
- Chocolate Protein Powder for high protein magic cookie bar, and also replace the sweetener.

Tips for perfect Homemade Kit Kat Bars without Peanut Butter
- Use sharp knife to cut rice cakes so they don’t break.
- Add milk only a little at a time or the mixture will be too runny.
- Spread paste on rice cakes gently; They can break very easily.
- Stir chocolate partway when melting so it doesn’t burn.
To store Rice Cake Protein Bars for Snack
To store homemade rice cake protein bars, place in the fridge for 3-4 days.
They won’t be as crunchy though.
To freeze, place protein rice cake Kit Kat bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!

I made these high protein sugar free Kit Kat candy bars with cornflakes with this ingredient list, but here’s some options to choose from.
- Peanut Butter Powder: About 3 Tbsp Peanut butter, but start with only 1½ Tbsp of water at a time.

Vegan Kit Kat Candy Bars
Since there’s no milk in this dairy free recipe, these Kit Kat protein candy bars can easily be made Vegan with the right ingredients.
Use a plant based protein powder to get a Vegan Kit Kat bar; ProteinWorld has a Vegan protein blend as well.
You also want to make sure you use dairy free chocolate chips too.

Homemade Kit Kat Protein Bars – Healthy, Gluten Free
Ingredients
- 6 squares Rice Cake Thins (or Graham Crackers)
- ¼ cup Peanut Butter Powder, 24g, see post for alternatives
- 2 Tbsp Chocolate Protein Powder, 11g
- 2 Tbsp + 2 tsp Unsweetened Almond Milk, 40ml
Chocolate Topping:
- 2 Tbsp Chocolate Chips, Sugar-free recommended below, 28g
- ¼ tsp Coconut Oil
Instructions
- Optionally, cut rice cake thins into 3 long strips each (1” wide) using sharp knife.
- In a bowl, combine peanut butter powder, protein powder and milk (add little at a time) and stir to form slightly thick spread.
- (Be Gentle) Spoon about 1 Tbsp mixture and spread on rice cake strip (or 3 Tbsp for full).Repeat for ⅔ of the pieces.
- Place one coated rice cake strip on another, and cover with a clean strip (to form sandwich).Repeat with all pieces.
Chocolate topping:
- Place the chocolate chips and coconut oil in a shallow bowl and microwave for about 30 seconds – at 15 second intervals – until it’s completely melted. Let cool about 5 mins.
- Spread chocolate on bars and use back of spoon to smoothen.Transfer to freezer to cool about 5-10 minutes.

Okay rice cake thins for the wafer in these is just genius. I sometimes felt the wafers in actual kit kat was a bit too thin but with these I can get the crunch and the chocolate. Perfect ratio ??
