And such soft fluffy pancake balls! These really were magical.
Ingredients for Chocolate Stuffed Protein Pancake Bites
These molten chocolate protein pancake bites are made with a few simple and healthy ingredients!
- Protein Pancake Mix – I used the Kodiak Cakes Protein Pancake Mix for these. Regular pancake mix works asa well.
- Vanilla Protein Powder – This adds in sweetness, so this protein powder pancake bites recipe has no added sugar; I used Quest Nurition Vanilla Protein Powder.
- Non-fat Greek Yogurt another protein-packed ingredient
- Baking Powder
For the Molten Protein Pancake effect:
- Sugar free Chocolate Chips or chopped Chocolate – I use monk fruit sweetened ones from Lakanto here (HAYLSKITCHEN for a discount here). Lily’s is another sugar-free option!
Tips for Protein Protein Powder Pancake Bites with Molten Chocolate Center
These stuffed protein powder pancake bites are really easy to make, but here’s some pointers to make them perfect:
- Use cold yogurt so that the dough does not get too sticky and hard to roll.
- Don’t over-mix the dough or it will get too warm and soft. Also, the protein powder can make the pancake balls tough.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free protein pancake balls.
- Don’t let dough sit out for too long; Work quickly; You don’t want the dough to get warm and sticky.
- Roll the balls tight – make sure you don’t hear a hollow from placing the chocolate chips in.
To store Kodiak Protein Pancake Balls
Just like regular pancakes, these baked Kodiak pancake protein bites can be stored on the counter. Let the baked protein balls cool completely before storing.
Store chocolate stuffed pancake balls in an airtight container on the countertop for about 1-2 days and in the fridge for 4-5 days.
To freeze, place cooled kodiak protein pancake bites in an airtight sealed container or freezer-safe zipper bags in the freezer for 2-3 months. Let them thaw on the counter then reheat in oven before eating!
Alternative ingredients for Healthy Pancake Bites
I made these healthy baked pancake bites with the particular list of ingredients for the perfect texture and molten chocolate effect, but here’s some alternatives you can try:
- Protein Pancake Mix: Use any regular pancake mix; You can make healthy baked protein pancake balls with krusteaz or bisquik pancake mix too with this recipe.
A gluten free one would also work, as long as its a just-add-water pancake mix. - Greek Yogurt: Coconut Yogurt
- Chocolate Chips: Chopped chocolate chunks; I’d recommend Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
For Vegan Baked Pancake Balls
These stuffed protein pancake bites have no butter or milk and can easily be made Vegan with the right ingredients.
To make high protein baked pancake balls, use a plant based pancake mix, protein powder and coconut yogurt.
Also be sure to use dairy free chocolate.

Protein Pancake Bites – 5 Ingredients, Stuffed, Easy!
Ingredients
- ⅔ cup Protein Pancake Mix, or any just-add-water pancake mix, weighed ~70g
- ¼ cup Vanilla Protein Powder, 22g
- ¾ tsp Baking Powder
- 6 Tbsp Non-fat Greek Yogurt, 84g
- 2 Tbsp Chocolate Chips, 28g, Sugar-free recommended below
Instructions
- Preheat oven to 350°F and line a baking tray with parchment paper.
- In a large bowl, combine pancake mix, vanilla protein powder, and baking powder.
- Add yogurt and mix until combined to form a dough ball; Stop as soon as ball forms.DO NOT OVER-MIX or the protein powder will make it tough.
- Divide dough into 10 pieces (1-2 Tbsp size) and roll into balls.Press a depression, place ~4-5 chocolate chips in the middle and cover. Roll into ball again.
- Place on prepared baking sheet; Bake 10-12 minutes until outside is slightly browned and looks cooked.
