The rich but healthy and fudgy chocolate mug cake with the crunch of graham crackers and the toasted marshmallows.
A real guilt free indulgence here with no flour, oil, butter or sugar!
Ingredients for Half Baked S’mores Protein Mug Cake
This single serve S’mores protein mug cake is made with a few simple and healthy ingredients, and has no butter or oil and no sugar either!
- Chocolate Protein Powder for high protein brownie that’s also sugar free.

A third alternative would be Quest, but you would need more milk here since this is a whey-caesin blend. - Unsweetened Cocoa Powder or Cacao Powder (for a rich S’mores mug brownie!)
- Coconut Flour
- Egg Whites for extra protein
- Unsweetened Almond Milk
- Baking Powder
And for the S’mores effect:
- Honey Graham Crackers
- Mini Marshmallows

Tips to make S’mores Protein Powder Mug Cake
This fudgy S’mores protein powder brownie really is an easy one and made in a mug or ramekin, but make sure you do all of this stuff to get is perfect.
- Grease the ramekin! You want the flourless protein mug cake to come off easily.
Use an oven-safe mug if you need.
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, protein powder will make your protein mug cake tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
- Don’t overbake the mug cake. The top will should be just cooked. It might look soft, but will harden when it cools a bit.
It will continue to cook when out, and you want the proper fudgy graham cracker mug cake center.
For a Microwave S’mores Mug Cake
This healthy s’mores in a mug can be made in the microwave or oven!
For a microwave s’mores mug cake, pour batter into a large mug (at least 1⅓ cup size), and microwave 2 min.
Alternates for this Healthy S’mores
I recommend making this single serving healthy S’mores mug cake using the ingredients and protein powder listed since it gives the best results.
If you need other options for the flours and such, here’s some alternatives for a healthy low calorie protein mug cake for one:
- Chocolate Protein Powder: Use Vanilla
- Whey-Caesin Protein Powder: Use 6 Tbsp + 2 tsp Milk
- Coconut flour: Try using about 3 Tbsp of Almond Flour
- Egg Whites: 2 Tbsp aquafaba (chickpea liquid). I haven’t given this a try yet though.
- Almond Milk: Any other milk

For the perfect Vegan S’mores mug cake, make sure you use a plant based protein powder and aquafaba.

S’mores Protein Mug Cake – Fudgy, Flourless, Fat Free!
Ingredients
- 1 scoop Whey Chocolate Protein Powder, 30g, ⅓ cup
- 1½ Tbsp Unsweetened Cocoa Powder, 7g
- 1 Tbsp Coconut Flour, 7g
- ½ tsp Baking Powder
- ¼ cup Unsweetened Almond Milk, 60ml
- 1 Egg White, 33ml
- ½ sheet Honey Graham Crackers, 8g
- 2 Tbsp Mini Marshmallows, 6g, or regular
Instructions
- Preheat oven to 350°F and lightly grease a 1 cup ramekin (or 1½ cup microwave-safe mug).
- In a bowl, whisk chocolate protein powder, cocoa powder, coconut flour and baking powder.
- Add almond milk and egg white, and stir until combined. Batter should be smooth.Taste batter and add sweetener if needed.
- Pour half batter into ramekin.Add crushed graham cracker.Pour remaining batter and top with more graham cracker chunks.
- Bake for 10 minutes.Top with marshmallows and broil 1-2 minutes (to toast marshmallows).Top should be mostly set, but still slightly wobbly. It will harden when cool.ORMicrowave 2 min.
- Let cool for a few minutes and enjoy!
